Denver’s old Fruition dining room is getting its lights turned back on. Madeline, a new restaurant from local chef Quincy Cherrett, is set to open May 7 at 1313 East Sixth Avenue, bringing an intimate, upscale spot back to a room that has sat quiet for more than a year. The plan is technique-driven cooking with an ingredient-first focus, built around housemade pastas and seasonal small plates.
According to Westword, Madeline will open on Thursday, May 7, and operate from 5 to 9 p.m. Tuesday through Thursday and 5 to 10 p.m. Friday and Saturday. The outlet also reports that Bryan Trott will serve as general manager, with the date and hours coming from the team’s announcement shared with local media.
Menu and vibe
Per the restaurant’s menu, early offerings include oysters with a radish and green-apple mignonette, a beet carpaccio with Thai red curry peanut sauce, and a crab cake paired with red miso shrimp bisque. The kitchen will also rotate housemade pastas and desserts such as black sesame cheesecake, signaling a mix of bistro comfort and a few curveballs, according to Restaurant Madeline.
A high‑profile handoff
Cherrett signed the lease for the 1,100-square-foot space and took over the remaining 11 years on Fruition’s lease, a move BusinessDen reported last winter. Chef Alex Seidel opened Fruition in 2007, and the restaurant closed in January 2025, leaving behind an address with serious local attachment for any successor to step into.
“Madeline is really a culmination of everything that’s shaped me,” Cherrett said in the opening announcement, as reported by Westword. Regular Architecture’s Kevin Nguyen called taking on the Fruition space “both an honor and a responsibility,” language the team says guided how much of the dining room to redesign and how much to preserve.
