Los Angeles-born Eggslut is sliding into Westfield Southcenter in Tukwila, bringing its cult-favorite breakfast sandwiches to the mall and widening the playbook in the process. The Southcenter shop is set to add two Wagyu burgers and rosemary fries to the usual morning lineup and is expected to open in the first week of May. District manager James Pham will be in charge of the new outpost.
Pham told What Now Seattle that Southcenter gives Eggslut a shot at diners from neighboring cities like Renton and Federal Way, and said the expansion is guided by the brand’s focus on “quality, consistency, execution.” According to the outlet, the Westfield counter is slated for a first-week-of-May debut and will stick with Eggslut’s made-to-order sandwich model. Pham added that building and training a new crew while keeping standards tight will be the early focus at Southcenter.
Westfield Southcenter’s official directory backs up the buzz, listing Eggslut as “coming soon” at 2800 Southcenter Mall, Seattle, WA 98188. The mall describes the restaurant as part of a broader reset of its food and drink offerings, signaling that the arrival is meant to be more than a one-off tenant swap. Westfield’s own confirmation gives the opening extra weight beyond franchise paperwork and neighborhood chatter.
From Capitol Hill to Southcenter
Eggslut’s first Seattle landing spot was Melrose Market on Capitol Hill, which opened last fall and drew coverage from KIRO 7. The company’s locations page lists the Capitol Hill address as 1527 Melrose Avenue and shows it open for business.
That debut was not entirely drama free. During construction, neighbors took issue with opaque window coverings that blocked views into the space, a concern Eater Seattle reported at the time. The flap over temporary coverings was brief, but it showed how a high-profile opening can ripple through a tight-knit commercial corridor like Melrose Market.

At Southcenter, Eggslut is stretching beyond its core breakfast identity. The Westfield location will feature Wagyu Golden Smash and Wagyu Royal burgers plus rosemary fries, while keeping standbys like the Fairfax and the Slut on the board, What Now Seattle reports. The expanded menu suggests this shop is designed to catch lunch and early dinner traffic along with the morning faithful. Pham said the space will keep Eggslut’s clean, modern look while fitting into the Southcenter layout.
