As reported by the Minneapolis / St. Paul Business Journal, Carbone's Pizzeria is set to move into the old Aurelio's location. The City of Ramsey lists Carbone's Pizza & Pub at 6415 Highway 10 NW on its economic development page and notes the council has approved the on-sale liquor license along with a planned early June opening. With that approval in hand, the operator can finish interior build-out and install exterior signage before opening to the public.
Aurelio's closed last year
The building most recently housed Aurelio's Pizza, which shut its doors after about four decades in Ramsey. The owners cited road construction, rising food costs, and rent as reasons for calling it quits. CBS Minnesota reported that June 30, 2025, was the restaurant's final day of business, and longtime regulars told the station the closure felt like losing a neighborhood fixture.
What Carbone's brings
Carbone's is a regional pizzeria chain that blends pizza service with a pub atmosphere. The brand traces its history back to the mid-20th century and leans on a mix of dine-in, carryout and catering.
