
Cerebral Brewing is locking in on downtown Parker, signing a long-term lease for a new taproom right on Main Street. The Denver-based brewery is planning a roughly 4,200-square-foot space at 20117 East Main Street with about 22 taps, an expansive roughly 2,000-square-foot patio, and an expected opening next summer.
Plans for Main Street
As reported by Westword, co-founder and CEO Sean Buchan said, “When I walked on downtown Parker’s Main Street, I said, 'this is awesome!'” According to the outlet, Cerebral signed a 10-year lease for the space and expects the Parker location to have “about the same” number of taps as its West Highland spot. Westword also notes the buildout will include the large patio and that the company aims to open in the summer of 2027.
Where the beer comes from
Cerebral currently operates locations in West Highland, Congress Park, and the Aurora Arts District, and Buchan told Westword that the Aurora Arts site serves as the brewery’s production hub. Westword's reporting also included business figures, noting that roughly 60% of sales come from taprooms and about 40% from distribution, and that production climbed from about 4,800 barrels in 2024 to roughly 5,200 in 2025, with the brewery on pace for about 5,700 barrels in 2026. Those growth numbers, Buchan told the outlet, are part of why Cerebral feels comfortable expanding beyond Denver proper.
Design and buildout
The Parker space will be designed by UNUM Collaborative and built by NOVUM Contracting Group, two Denver-based firms listed on the project that also worked on the brewery's recent West Highland build. UNUM's portfolio notes work with Cerebral, and NOVUM markets itself as a local commercial builder experienced with tenant improvements and restaurant projects, which points to a tailored Main Street fit. Those local teams are expected to help the taproom land quickly and with a neighborhood-friendly layout.
Why Parker?
Parker has been actively remaking its downtown, and Axios reported that a quietly created Instagram profile hinted at Cerebral's interest while renderings for the new East Main development labeled part of the project “brewery.” According to Axios, town leaders have been courting retail and dining tenants as part of a push to activate Main Street and replace vacant storefronts. Landing a reputable Colorado brewer would be a visible win for that effort.
“A town spokesperson said in an email to Axios he did not 'believe there's been a formal announcement regarding any new specific brewery coming to Parker,'” Axios reported, underscoring that details were still being finalized when the social breadcrumbs appeared. That caution has not stopped local developers from including a brewery slot in East Main's plans, and Cerebral's signature could help accelerate leasing for nearby commercial space.
Food, taps and the local scene
Buchan said Cerebral is still weighing whether to partner with an outside food operator or run food in-house, a choice shaped by West Highland's setup with a built-in pizza partner. Cerebral's West Highland page notes a collaboration with Outside Pizza and a 4,000-square-foot taproom, a model the company has used while expanding in the metro area. For Parker residents, that means the new spot could arrive with a ready-made food program or a different local concept chosen after community conversations.
Construction photos included in coverage show early work at the Main Street space, and Cerebral's leadership says the Parker taproom will slot into a cautious growth plan the company adopted after buying and building a production hub in Aurora. For now, details on menus and staffing are pending, but Parker's Main Street is officially on the brewery's map as a place to watch over the next year.
