La Stima, the natural-wine bar on Ybor City’s 7th Avenue, is getting a morning sidekick. Double Six, a coffee and brunch concept from the same team, will start pouring coffee and serving breakfast in the bar’s space in early June. The shift turns an evening-focused wine lounge into a two-shift operation that could boost foot traffic on La Stima’s block.
Double Six Moves Into the Space
According to the Tampa Bay Times, Double Six is slated to open on June 6 and will serve breakfast burritos, coffee drinks and a compact brunch menu. The Times describes Double Six as a coffee-and-brunch concept from the team behind La Stima and ran a promotional image credited to Double Six.
La Stima’s Setup and Hours
La Stima opened as a small natural-wine bar with a plant-forward menu and lists its address as 815 E. 7th Ave in Ybor City on La Stima. The bar currently operates mainly in the evenings, and its owners Aaron Schaub, Coral Carrasquillo and Ryan Fouche have deep roots in Tampa’s independent bottle-shop and pop-up scene. Adding Double Six will let the space stay active during morning and midday hours while keeping La Stima’s evening wine service intact.
Why the Pairing Makes Sense
Industry coverage shows that pairing coffee by day with wine at night is a growing day-to-night strategy to squeeze more revenue from the same footprint. As Perfect Daily Grind notes, cafés that add wine and extend hours can attract new customers and smooth out slow daytime periods, although the approach requires extra licensing, training and storage. For small Tampa operators, a morning coffee service can be a pragmatic way to broaden income streams without changing an evening identity.
Local Pedigree and What It Means
The La Stima team has operated in local bottle shops and leaned on pop-ups and collaborations while building the wine bar, according to Creative Loafing. That experience with rotating formats may make it easier for the crew to flip the room between breakfast service and evening wine shifts.
When to Go
Double Six is expected to start service on June 6. The wine bar is located at 815 E. 7th Ave in Ybor City, and hours are posted on La Stima. For additional reporting and the original announcement, see the piece in the Tampa Bay Times.
