
Cold Spring has a new weekend temptation rolling into town. St. Cloud Technical College student Merideth Theis has launched the Sizzle N Sass Shack, a food trailer serving a rotating lineup of comfort-heavy eats, from coconut shrimp baskets to gourmet grilled cheeses. She ran the trailer through its first public event this past Saturday, with family members hustling alongside her to keep the steady line moving. The trailer leans into deep-fried festival staples and hearty sandwiches, with Theis hoping it becomes a regular draw for nearby towns and local events.
As reported by WJON, Theis is currently attending St. Cloud Technical and Community College and launched the Sizzle N Sass Shack while juggling classes and another job. "The biggest challenge for me, probably, is just keeping everything organized and staying on top of everything," she told the station.
What She's Serving
The Sizzle N Sass Shack’s event menu has featured a coconut shrimp basket, sweet corn nuggets, a Mexican street corn burger and a gourmet grilled cheese while Theis figures out which items travel well and can handle a rush. "I'll probably pick between the sandwiches and melts," Theis told WJON, adding that she is working on taco ideas and plans to rotate offerings to keep things manageable at busy events.

Vendors in Minnesota operating as mobile or temporary food establishments must follow state licensing rules outlined by the Minnesota Department of Agriculture.
