
Sunú Taqueria Molino has quietly fired up its plancha on North Mesa, bringing a northern Mexican-leaning lineup of tacos, sopes, and bright salsas to downtown El Paso. Chef-owner Yered Cantú marked the soft opening with a low-key ribbon-cutting before welcoming diners into a neon-lit room dressed up with tequila-bottle décor. The space, which previously housed Cónico, officially opened to the public on June 11.
According to the El Paso Times, Sunú Taqueria Molino began service June 11 at 610 N. Mesa St., with Cantú running the kitchen. The paper notes a strong focus on northern Mexican plates such as cochinita pibil sopes and dorado tacos, with the opening timed as El Paso gears up for heavier summer foot traffic tied to World Cup 2026 events.

Images from a June soft opening, distributed through the USA TODAY Network, show house-made sopes, beef flautas, and elote being worked on in the kitchen. Photographs dated June 9 also highlight the dining room’s neon signage and tequila-bottle sculptures, giving the place a festive but streamlined taqueria feel. Taken together, the visuals back up the idea that Sunú is chasing a street-food spirit with more polished technique.
From Cónico to Sunú
As the El Paso Times reports, Cónico Cocina Mexicana operated in the same spot for roughly three and a half years before the transition. Cantú was already in charge of that kitchen, and the new taqueria format reportedly keeps some of his refined touches while loosening things up into a more casual setup. The switch adds to a growing list of downtown shakeups as restaurateurs position themselves for rising summer crowds.

Diners can look for a compact menu built around shareable plates, tacos, and a short cocktail and tequila list designed to play off the bolder flavors. Given the downtown address and early-summer launch, the room is likely to stay busy, especially as visitors roll in for seasonal events.
