The stand is starting with USDA Prime diezmillo (chuck roll) as its single opening cut, and some of the trimmings are rendered into veneno cracklings that also show up on the menu. The Sonorancali tortillas are produced in Sylmar by Graciana Tortilla Factory using Yosemite Organics flour and beef tallow. The whole setup is intended to echo Hermosillo's asadero tradition, according to Eater Los Angeles.

The project leans heavily on recipes and rituals from Hermosillo, where asaderos and a generous salsa bar sit at the center of the carne asada experience.
