
A 20-seat newcomer is sliding into the West Village this fall, promising Euro-Asian plates big on texture in a dining room that is deliberately intimate. JB's Eatery is set to deliver compact, detail-driven cooking that blends French and Italian technique with bold Asian seasonings, with the owners aiming for a high-touch neighborhood experience without the white-tablecloth stiffness.
As reported by What Now New York, JB's Eatery is a partnership between Huaibing "Bill" Zhang, who will run the front of house, and chef John Liang, a classically trained cook with more than a decade of experience. The cozy 20-seat spot grew out of a series of pop-ups and is now under construction, with the team eyeing a soft opening in early fall. Liang told the outlet that diners can expect a heavy focus on umami, herbs and spices that build a "sweet, sour, and salty" balance, while Zhang said pricing will land above a typical bistro yet remain below Michelin-level territory.
Menu And A Signature Dish
What Now New York highlights a signature dry-aged duck inspired by Peking duck that is set to be blanched in a vinegar "crispy water" solution, then double-roasted for maximum texture. The bird will be finished with a soy-honey glaze infused with star anise, cloves and bay leaves, followed by a turn over charcoal for a smoky finish. Beyond the duck, the menu will remix French and Italian staples like French onion soup, poulet rôti and risotto, each reworked with punchy Asian flavorings.
Build-Out And What Locals Should Know
The build-out is underway on West Eighth Street, with recent commercial renovation filings for the 51 W. Eighth Street address reflected in public property and permit records. Realtor.com lists general construction permits issued earlier this year, confirming ongoing work at the site. With just 20 seats and labor-intensive preparations, reservations are expected to be tight once JB's Eatery opens its doors.
