PopUp Bagels, the buzzy East Coast bagel outfit that blew up on social media, is quietly rolling into north Austin with a takeout-only shop at The Domain Northside. Construction is expected to kick off this summer, with the company eyeing a fall opening.
Plans and permit details
According to MySA, a Texas Department of Licensing and Regulation filing shows PopUp Bagels is slated for a roughly 1,425-square-foot space at 11501 Rock Rose Ave., Suite 152, with an estimated $350,000 build-out. The filing describes the project as a takeout-focused interior renovation, with construction scheduled to begin August 1 and wrap up by September 15.
What they’ll serve
PopUp Bagels, founded in 2021, built its cult following on the "Grip, Rip and Dip" approach: hot whole bagels sold by the bag, paired with tubs of rotating schmears and salted butter. The brand’s site lists five core bagel varieties and a bundles based ordering setup that leans into grab and go ease rather than classic bagel sandwiches or full service dining, which makes the Domain’s compact, high traffic space a logical match.
Part of a bigger Texas push
The Austin shop is one piece of a larger Texas rollout. PopUp opened its first Lone Star location in Dallas this spring and has signaled plans for at least a dozen stores across Dallas Fort Worth, Houston, Austin and San Antonio, according to the Houston Chronicle and recent industry coverage. Early openings in Dallas and Houston show the brand and its franchise partners moving quickly to plant flags in multiple major metros, with trade reporting tracking the rapid pace of new stores.

The Domain Northside has been steadily filling its smaller spaces with quick service and grab-and-go food concepts, and PopUp’s takeout-heavy model slots neatly into that playbook. MySA reports that the company did not immediately share a firm Austin opening date when contacted, but the new Domain location is still expected to debut this fall. Until then, Austinites who cannot wait for their grip, rip and dip moment can sample the concept at PopUp’s existing Texas shops in Dallas and Houston.
