Denver’s taco map may soon pick up another pin, with Taqueria Los Gallitos planning a new restaurant along East Colfax Avenue. The proposed spot would bring the Denver-based Mexican restaurant’s familiar lineup of tacos, burritos and tortas to a busy commercial corridor. For now, though, diners will have to wait a little longer before ordering anything at the new address.
Los Gallitos Plans East Colfax Location
The proposed restaurant is slated for 7840 E. Colfax Avenue, according to WhatNow, which reported that the location surfaced in a city filing. The planned menu is expected to include asada, al pastor and birria tacos, along with burritos, tortas, quesadillas and aguas frescas. No construction schedule or opening date has been announced.
That menu would closely align with the flavors Taqueria Los Gallitos already promotes at its Denver location. The restaurant’s official menu features tacos filled with options such as asada, barbacoa, birria, carnitas, lengua, and pastor, plus an extensive selection of tortas and other Mexican dishes.
Another Restaurant Joins A Changing Colfax
The East Colfax proposal arrives as the corridor continues to absorb construction, redevelopment, and a steady turnover of small businesses. Denverite reported that 10 businesses within the affected stretch had closed since October 2024, while nine new businesses opened during the same period.
A new Los Gallitos would add another food option to a stretch where established neighborhood restaurants are navigating the disruption while new concepts keep moving in. Until permits advance and the owners set a timeline, the East Colfax taqueria remains a plan rather than a grand-opening announcement.
