Everett’s next restaurant opening is already on the calendar—sort of. Thistle & Thyme Bistro is targeting a late-August debut in the former Ho Sushi Bistro space, giving the 128th Street corridor a new dining tenant while leaving plenty of menu details for a future reveal.
Jose Salgado told WhatNow Seattle that the team is aiming for late August. The restaurant has not released its menu or operating hours, and no firm opening day has been announced.
The restaurant’s regulatory paperwork is a little more concrete. A July 23 filing from the Washington State Liquor and Cannabis Board lists Thistle & Thyme Bistro as a new application at the Everett location for a spirits, beer and wine restaurant lounge license.
The filing names Ernesto Salgado Acosta, Janet Cervantes Salgado, Jose Salgado Acosta and Mariana Francisco Asencio as applicants. Because the record is a new application, it signals that the project is moving through the licensing process but does not establish that a final liquor license has been issued.
A Fresh Start For The Former Ho Sushi Space
Thistle & Thyme will take over the former Ho Sushi Bistro space rather than opening in a newly built restaurant shell. That could give the incoming team a head start as it prepares the site, though the owners have not publicly detailed any renovation plans or the restaurant’s planned design.
Menu Details Are Still Under Wraps
For now, the late-August target is the clearest piece of information available about the debut. Everett diners will have to wait for the menu, hours and exact opening date before they know whether Thistle & Thyme will lean more toward casual neighborhood dining, a full-service bistro or a lounge-forward format.
