Wheat Ridge is about to get a two-for-one restaurant expansion from the team behind King of Wings, with a smashburger concept and Chicago tavern-style pizza operation planned under one roof. Snipeburger and Tillie’s Tavern Pizza are slated for the former Colorado Plus space, though the owners have not announced an opening date. The setup will give diners two distinct menus and separate entrances in the same building.
According to WhatNow, King of Wings owners Eddie Renshaw and Evan Pierce are developing the concepts with kitchen manager Mitch Conley. Snipeburger will center on smashburgers, while Tillie’s Tavern Pizza will serve thin, Chicago tavern-style pies, with both brands operating from 6995 W. 38th Avenue.
A June agenda packet from Renewal Wheat Ridge describes a substantial interior and exterior renovation at the site. The proposed project includes an estimated $283,753 interior buildout and a $102,762 patio covering, indicating the plans have moved beyond the occasional pop-up stage.
Two Pop-Ups Are Becoming Their Own Brands
Snipeburger and Tillie’s Tavern Pizza have already been tested at King of Wings locations, giving regulars an early preview before either concept gets a dedicated home. Westword previously reported that Snipeburger grew during the long recovery from a 2021 kitchen fire that temporarily shut down King of Wings in Wheat Ridge.
That burger pop-up became more than a side project during the rebuilding period, helping keep the business operating while the original restaurant faced permitting and construction delays. The team’s new plan effectively turns that survival strategy into a standalone restaurant, while Tillie’s gives the group a second lane beyond wings.
The existing King of Wings ordering page already lists Tillie’s Tavern items such as a 14-inch pizza, specialty pies and Italian beef. Those offerings may provide a preview of the pizza concept, although the final menus for the new Wheat Ridge restaurants have not been released.
What’s Next For The 38th Avenue Site
The new restaurants are planned for the building formerly occupied by Colorado Plus, which ended its Wheat Ridge run after roughly two decades. The redevelopment would bring a fresh food-and-drink destination to the 38th Avenue corridor while preserving the King of Wings team’s connection to Wheat Ridge.
For now, the opening remains a waiting game: WhatNow reported that no timeline had been announced at publication. Until construction and permitting are complete, diners will have to catch the concepts through their existing King of Wings pop-up appearances.
