The shutdown was announced on the shop’s Instagram, as reported by The Denver Post. The paper notes that owner Zach Parini opened Pizzeria Lui in 2017 and ran the counter-style operation for about 10 years, and that the restaurant landed on the Denver Post’s best-pizza lists in 2021 and 2023.

Parini, who trained as a baker at Grateful Bread before opening the shop, zeroed in on blistered, bubble-crusted pies that reviewers praised for both classic combinations and more adventurous riffs.
