Condor quietly opened Monday at 1164 E. Commerce St. in St. Paul Square, slipping a Marfa-chic wine bar onto the East Side. The low-lit room sits right next to Miles and gives the block one more grape-focused excuse to stick around a little longer.
What Condor Is Pouring
Inside 1164 E. Commerce St., Condor builds its list around low-intervention bottles, including skin-contact orange wines, fizzy pet-nats and other minimal-intervention picks meant to be shared around the table. The food menu stays short and snack-forward, with sourdough bread service, a barbacoa melt and heirloom popcorn stepping in as supporting players to the pours.
Summer hours are Sunday, Wednesday and Thursday from 5 pm to 11 pm, and Friday and Saturday from 5 pm to midnight, according to CultureMap San Antonio.
The Team Behind Condor
Condor comes from Tatanka Guerrero’s Dreamers & Doers Hospitality Group, the crew already known for Miles and El Tigre Coffee Roasters and part of Guerrero's broader portfolio that stretches to projects in Marfa and Austin. Miles debuted in May in the adjoining former Francis Bogside space, and Condor is being positioned as a smaller, wine-first companion to that buzzy bar, according to reporting from the San Antonio Report.
St. Paul Square's Comeback
After a rash of closures in late 2025, St. Paul Square has started to see a wave of new openings roll in, and Condor is now the third wine-bar concept to cycle through this compact East Commerce footprint. The space has already lived several lives, from Anne’s to Vino Veritas, and Condor’s pared-back, Marfa-chic look and natural-wine focus mark a sharp stylistic pivot for the block, as noted by CultureMap San Antonio.

For now, Condor is keeping things simple with walk-ins while it builds out its bottle program, with owners sharing updates on social channels. The new wine bar adds another reason for East Side diners to linger and hints that St. Paul Square's after-hours scene is leaning harder into slow sips and small plates.
