According to the Las Vegas Review-Journal, the debut menu at Signora Pizza Lab features six red pies, including an eggplant parmigiana and a spicy diavola, plus four white pizzas such as a cacio e pepe. There are also four fried pizzas, including one with ’nduja, and a short dessert list that hits the classics: cannoli, tiramisù and Nutella-and-pistachio angioletti. The Review-Journal notes that the lab is the first permanent home for Pastore’s Signora Pizza truck and that the truck will pause service during the hottest weeks of summer, signaling a focus on the new shop while still leaving room for offsite events and giving regulars a reliable place to find the full Signora lineup.
