Wheat Ridge is about to get a new beer-and-mountains hangout, with Prost Brewing Co. planning its fifth Colorado biergarten at Clear Creek Crossing. The new spot is expected to open in August as part of The Lookout, a larger dining and entertainment destination taking shape near the foothills.
The approximately 6,800-square-foot biergarten will include an enclosed patio, private event space and a one-barrel research-and-development brewhouse, according to WhatNow Denver. The beverage lineup is planned to stretch across 40 taps serving Prost beer, cocktails, wine, cider and nonalcoholic drinks.
Prost’s own location page lists biergartens in Denver, Highlands Ranch and Northglenn, along with a Fort Collins taproom, while the Wheat Ridge location is marked as coming soon. The expansion gives the Colorado brewery another large-format gathering space outside its original Denver home.
A Biergarten Designed For More Than Beer
The Wheat Ridge location is being pitched as a full destination rather than a simple taproom. Beverage Industry reports that the concept will pair Prost’s German-inspired menu with a full-service kitchen, private events and small-batch brewing experiments guests can watch on site.
The brewery also plans to work with Colorado food producers, including sausage maker Charcutnuvo and XLVII’s Bakery, for the new location. That emphasizes a complete meal-and-gathering experience, with pretzels, German specialties and a broad drinks menu sharing the stage with the bier.
The Lookout Will Add A Public Park And Amphitheater
Prost will be one of the food-and-beverage anchors at The Lookout, a 4.76-acre project being developed by Evergreen Devco at the western edge of Clear Creek Crossing. Evergreen Devco says the U-shaped development will frame a public park with western views and a communal outdoor dining area.
The City of Wheat Ridge’s planning documents describe a three-building restaurant corridor with a park, game lawn, fire pits, agriculture-themed play features and a small amphitheater for performances and movie screenings. The project is also being designed with connections to nearby trails, giving the biergarten a built-in audience of neighborhood residents, families and cyclists.
The opening comes as Wheat Ridge’s beer scene continues to change. Hoodline reported that Colorado Plus closed in May after 13 years, making Prost’s arrival a notable new addition to the city’s growing mix of breweries, restaurants and outdoor hangouts.
