A new breakfast spot is staking its claim in Round Rock's booming morning dining scene. Eggs Up Grill plans to open a restaurant at 3200 Greenlawn Blvd., Ste. 100, with an eyed launch date of January 2027, bringing its breakfast, brunch and lunch menu to a retail corridor already anchored by heavy daily foot traffic.
The Round Rock restaurant is locally owned by Michael and Rana Bosleah, who plan to open several Eggs Up Grill restaurants across the greater Austin area, according to Community Impact. The couple committed to opening four Eggs Up Grill locations in the North Austin area as part of an eight-unit expansion deal spanning the greater Austin metro region, per Community Impact's earlier reporting. This Round Rock site marks their second Eggs Up Grill outpost in Williamson County, following their Cedar Park restaurant, which opened in May 2025.
The Bosleahs aren't newcomers to the local dining scene. Before signing on with Eggs Up Grill, the pair built a restaurant footprint across Williamson and Travis counties by owning Hurricane Grill & Wings in Round Rock and Levant Café & Grill in Cedar Park, giving them established ties to the area's supply chains and staffing pool.
Why This Corner of Round Rock
The Shops at Greenlawn retail center, where the new restaurant is headed, is shadow-anchored by an H-E-B grocery store that draws more than 2 million annual visitors, and it sits directly across from Dell Technologies' 2.1-million-square-foot corporate headquarters campus, according to real estate firm CLD Realty. That combination of grocery traffic and office workers makes the corridor a natural fit for a daytime-only breakfast concept looking to build a steady customer base from day one.
Texas Department of Licensing and Regulation records show a $140,000 interior renovation project registered for the 2,869-square-foot space, with construction scheduled between May and July of this year. The buildout size lines up with Eggs Up Grill's standardized footprint for its single-shift restaurants nationwide.
A Fast-Growing Chain Splits the Austin Market
The Round Rock location isn't the brand's first in the Austin area. The metro's first Eggs Up Grill opened in South Austin at 9021 Goodnight Ranch Blvd. in November 2025, under a separate multi-unit franchise agreement led by retired Air Force officer Omar Thompson and emergency physician Dr. Megan Hood, according to the International Franchise Association. That deal effectively split the Austin market in two, with Thompson and Hood covering South Austin while the Bosleahs took on the northern suburbs.
Eggs Up Grill was founded in Pawleys Island, South Carolina, in 1997 by restaurateur Chris Skodras and operates on a single-shift model, open daily from 6 a.m. to 2 p.m. and focused strictly on breakfast, brunch and lunch, per QSR Research Hub. Since its 2018 acquisition by Spartanburg, South Carolina-based private equity firm WJ Partners, the chain has expanded to reach 110 open locations nationwide as of this past June, according to PR Newswire. The brand has also posted 20 consecutive quarters of positive same-store sales growth through 2025, along with a 27% increase in average unit volume since 2021, the same outlet reports.
Round Rock's Morning Menu Gets More Crowded
Eggs Up Grill's arrival adds to an accelerating wave of morning dining options opening across Round Rock. Retro diner Bed Rock Breakfast & Bar is set to open on Main Street, while a 4,000-square-foot Toasted Yolk location has already cracked into the H-E-B strip on East Palm Valley Boulevard. With national chains and independent concepts both chasing the same suburban morning crowd, Eggs Up Grill's strict daytime-only hours and corporate backing could give it an edge as it works toward its targeted January 2027 opening.
