A Louisville sandwich shop that turned slow-cured pastrami, matzo ball soup and deli-counter nostalgia into a neighborhood destination is heading for the exit. Good Belly will close at the end of August, giving regulars only a few more weeks to order one last towering corned beef sandwich.
Owners Jess Bookin and Jeff Williams announced that they have decided to close Good Belly, according to The Courier Journal. The announcement marks the end of the shop's run.
Good Belly is set to close at the end of August. For Louisville diners, that means a brief final window for the shop's house-made deli staples before the kitchen goes dark.
Good Belly Grew From Food Truck To Douglass Loop Fixture
The business began as a food truck in 2021 before moving into a permanent space near Douglass Loop. WLKY reported in 2023 that Good Belly was preparing to open its first brick-and-mortar location, bringing New York Jewish deli-style food to a Louisville market that Bookin said lacked an authentic version of it.
That storefront quickly became known for making much of its menu in-house, especially the corned beef and pastrami. The meats were not exactly a grab-and-go operation: WLKY's later profile described brisket prepared through a process that takes about a month and includes smoking.
A Scratch Kitchen With A Very Louisville Following
Good Belly's appeal extended beyond the classic rye-and-mustard order. LEO Weekly highlighted the shop's matzo ball soup, potato latkes, house-made chips and rotating specials, including a chopped cheese and a Swiss-filled knish.
The restaurant also filled a particular niche in Louisville's dining scene: a chef-driven sandwich shop built around scratch preparation rather than simply assembling pre-made deli ingredients. That made every pastrami order a small exercise in patience, even if the customer only had to wait a few minutes at the counter.
The owners announced the closure, according to The Courier Journal. Good Belly's closing will end a run that began with a food truck.
There is no need to overthink the farewell menu: pastrami, corned beef, a side of latkes and something sweet should do the job. The last bite is coming soon, and Louisville's deli devotees now have until the end of August to make it count.
