Morimoto Asia Launches Sushi Showdown, Six Orlando Chefs Battle for Charity

Morimoto Asia at Disney Springs is trading ramen bowls for sushi platters this fall, launching an inaugural Sushi Showdown on September 21 that pits six of Orlando's top sushi chefs against each other in front of a live crowd. The one-night-only competition will feature exclusive tastings of premium rice and tuna, with guests voting on the best raw and cooked preparations, and every dollar raised going to charity.

According to the Orlando Sentinel, the competing chefs are Kevin Abanilla, Lex Bawgus, Lewis Lin, David Tsan, Chau Trinh and Huy Tin, each representing a different corner of Central Florida's sushi scene. The event will run in two seatings, at 5:30 p.m. and 8 p.m., and the format splits into a first round of raw preparations followed by a second round of cooked dishes. Staffers will break down a whole bluefin tuna in full view of guests and distribute portions to each competitor, the Sentinel reports.

The showdown is the successor to Ramen Rumble, the popular annual cook-off at the same venue that wrapped its eight-year run with a final Battle of the Champions event on February 2, 2026, according to Inside the Magic. That finale raised a record $17,430 for Give Kids The World Village, per a Give Kids The World Village Facebook post, capping eight years of fundraising for the Kissimmee nonprofit. Yuhi Fujinaga, director of culinary for Patina Group, said the event will continue the legacy of the Ramen Rumble and feature Orlando's finest sushi chefs, per the Sentinel.

Meet the Chefs Competing for Sushi Supremacy

Chau Trinh brings decades of standing in Central Florida's upscale sushi world as executive chef and owner of Sushi Pop in Oviedo, known for multi-course omakase dinners built around seafood from Tokyo's Toyosu Market, according to Orlando Weekly. Kevin Abanilla, a former chef de cuisine at Soseki who staged at Michelin-starred venues including The French Laundry, now crafts à la carte sushi at Okonomi, a 10-seat walk-up counter inside Orlando's Mills Market, the same outlet notes.

Lex Bawgus represents Sushi Saint, Orlando's first dedicated hand-roll bar, which opened under Michelin-starred chef Michael Collantes and has earned Michelin Bib Gourmand honors in 2024, 2025, and 2026, per Visit Orlando. Lewis Lin and David Tsan are tied to Hayashi Tarō, a soon-to-open omakase bento concept launching this spring in the Mills 50 neighborhood; Lin also operates the Michelin-recognized Juju and yakitori spot Susuru, according to Orlando Weekly. Rounding out the lineup is Huy Tin of Seito Sushi Baldwin Park, a Ramen Rumble veteran who has been with Good Salt Restaurant Group for about a decade and a half.

Tin, who told the Sentinel that guests will be able to walk freely between stations, said he plans to work with 2 oz. tuna servings and will prepare dishes on the spot while guests watch. Jason Chin, a member of Good Salt Restaurant Group, said the event will keep the spirit of competition going at the same venue and showcase Orlando sushi talent, per the same report. Good Salt, founded by Jason and Sue Chin, also operates Orlando venues including Seito Sushi, The Osprey, Reyes Mezcaleria and The Monroe, and was named a James Beard Award finalist for Outstanding Restaurateur in 2025, according to Orlando Weekly.

Tickets, Pairings and the Full Night's Lineup

General admission tickets run $125 per person plus tax and gratuity, while VIP experiences cost $700 and include booths for up to four people. A six-sake pairing is available for $25 and features premium pours from Dassai, Hakkaisan, Kubota, Nanbu Bijin and Soto, per the Sentinel. Morimoto Asia will also feature additional food stations with bites, alongside live entertainment and an on-site auction throughout the evening.

All proceeds, 100 percent of them, will go to Give Kids The World Village, the Kissimmee nonprofit that supports unforgettable vacations for critically ill children and their families. The organization, which is celebrating its 40th anniversary this year, spans 89 acres with 166 guest villas and serves as the resort destination for roughly half of all U.S. children eligible for a wish trip to Central Florida, according to Positively Osceola. It was founded in 1986 by Holocaust survivor and hotelier Henri Landwirth, who established the village after learning of a six-year-old leukemia patient named Amy who passed away before her dream trip to Orlando theme parks could be arranged.

Morimoto Asia itself has hosted charitable events like this since opening at Disney Springs on September 30, 2015, as the first pan-Asian collaboration between Iron Chef Masaharu Morimoto and Patina Restaurant Group, housed in a two-story, 36-foot-tall dining venue in the Landing district. The Sushi Showdown marks the first time that legacy of competition and giving carries forward under a new name, with tickets covering a single night of raw-versus-cooked bragging rights among some of the city's most decorated sushi talent.
