Per WhatNow, Mountain Mike's chief executive Jim Metevier has said Texas is expected to become the chain's second-largest state.

WhatNow reports that Hector Haget, who operates a Mountain Mike's Pizza location in Frisco and is also the franchise owner of the Celina Mountain Mike's Pizza location, was contacted for details about the Prosper project. According to the outlet, an additional response from Haget was not received before press time.

A Familiar Playbook for North Texas Expansion

Haget's name has become a familiar one in Collin County pizza circles. Haget and fellow franchisee Khris Tate originally signed a three-store franchise agreement in August 2021 under Jefes Pizza, LLC to bring Mountain Mike's Pizza to Collin County, with initial targets including Frisco, McKinney, and Prosper, according to QSR Web. Before joining the pizza business, Cuban-born Haget built his North Texas restaurant footprint as an operator of Jersey Mike's Subs locations, later partnering with his son-in-law Tate to launch additional franchise concepts, as reported by CultureMap Dallas.

That partnership has already produced a cluster of openings nearby. Haget and Tate opened Mountain Mike's 11th Texas location in July 2025 in nearby McKinney at 4590 W. University Drive, a 3,000-square-foot restaurant featuring seven big-screen TVs, a video wall, a kids' arcade, and an outdoor patio, per CultureMap Dallas's reporting. The pair also expanded into Prosper itself earlier that year, launching the Texas debut of Chicago-based Cilantro Taco Grill at 1470 W. Frontier Parkway, across from Prosper High School, in April 2025.

What Diners Can Expect on the Menu

Mountain Mike's Pizza locations typically feature family-friendly settings with arcade games and big-screen TVs, according to WhatNow's reporting, and the chain is known for its crispy, curly pepperoni and mountain-sized pizzas made with dough prepared fresh daily. Beyond pizza, the outlet notes the menu includes wings, salads, sandwiches, and desserts. North Texas locations have offered 20-inch “Mountain-sized” specialty pizzas priced up to $37, 6-inch individual pies starting at $7, bone-in and boneless wings, crinkle-cut potato wedges, and daily lunch buffets, per CultureMap Dallas. The chain currently has locations in Grand Prairie and near Fort Worth-Saginaw, WhatNow reports, in addition to its Frisco and Celina restaurants under Haget's ownership.

Prosper's Growth Fuels the Restaurant Boom

The Prosper location fits into a national growth spurt for Mountain Mike's Pizza. The chain completed its largest growth year in company history in 2025, opening 24 new locations nationwide, crossing its 300th store milestone in Las Vegas, and expanding its development pipeline to more than 100 locations across 16 states, according to Restaurant Hospitality. In an August operational update, the chain said it plans to open roughly 20 new locations across 17 states during 2026, targeting a 7% increase in its national footprint, per RestaurantNews.com.

Prosper itself has become one of the fastest-growing suburbs in the Dallas-Fort Worth metroplex, which helps explain why franchise operators keep circling its commercial corridors. The town's population reached 49,355 as of January 1, a jump of more than 63% from the 30,174 residents counted in the 2020 U.S. Census, according to the Town of Prosper. Town demographic figures also show a median household income of $177,244 and an average home valuation of $866,650, an affluent base that has made the area attractive to national multi-unit franchise operators.

That growth has turned Frontier Parkway into a competitive strip for pizza lovers. Capo's Pizza & Pasta opened at 2720 W. Frontier Parkway in May 2026, serving fusion specialty pies topped with paneer, tandoori chicken, and gyro meat, as reported by Community Impact. Mountain Mike's arrival would add its large-format, arcade-equipped model to a corridor already filling in with both traditional and specialty pizza concepts.

Hoodline has tracked Mountain Mike's expansion across multiple states this year, including a Cedar Park opening near Austin and new stores in Edmond, Oklahoma, Summerlin, Nevada, and El Dorado Hills, California. The Prosper project remains in planning stages, and no opening date has been announced.
