Denver restaurateur Shuang “Sherry” Crossland is preparing to open six new restaurants across the metro area, stretching from Cherry Creek to Arvada, Aurora, and Broomfield, with debuts staggered between fall 2026 and early 2027. The wave includes a fourth location of her dim sum and small-plates concept Miya Moon, two additional Chubby Fish Sushi outposts, a Japanese-style izakaya in Broomfield, and a pair of upscale sushi concepts sharing a single Cherry Creek building.
According to WhatNow, the two Cherry Creek projects — Sushi 37 and SYC Omakase — are both targeted to open in September 2026 at 2817 E. 3rd Ave. Sushi 37 will occupy the building's lower level, while SYC Omakase takes the smaller upstairs space, and together they mark a more upscale sushi experience within Crossland's growing portfolio. Crossland, who operates Go Fish Sushi, Chubby Fish Sushi, Miya Moon and SYC Concepts, has spent nearly two decades building her presence in Denver dining, according to Denver Westword.
From Baker Neighborhood Sushi Counter to Metro-Wide Group
Crossland co-founded One Concept Restaurant Group in 2007 with sushi chef Qun “Ben” Zheng, starting with the original Go Fish Sushi at 1 Broadway in Denver, per Westword's reporting. That flagship location earned early local recognition, with Hoodline once naming it a top Baker spot back in 2020. By March 2025, the group had grown to 12 locations across Colorado under various Asian dining brands, including The Bronze Empire hot pot, Mikaku Ramen & Temaki, and local Kung Fu Tea outposts, Westword reported at the time.
Before building her restaurant empire, Crossland grew up in Dalian, China, and studied international business at Metropolitan State University of Denver while working as a hostess and server, eventually taking over management at Go Fish Sushi, according to a 2020 feature in 303 Magazine. That steady, casual-dining growth now forms the base from which she's launching SYC Concepts, described in the new reporting as her upscale restaurant group representing a shift toward more elevated Asian dining, with an emphasis on restaurant design and overall hospitality experience.
Broomfield's Longtime Sushi Spot Becomes an Izakaya
One of the six new restaurants isn't opening in a new building at all — it's replacing one. Yuzu Izakaya, a Japanese-style restaurant, is planned for 2055 W. 136th Ave., Suite B106, in Broomfield, the same address where a Go Fish Sushi location had operated for 12 years before permanently closing in January 2026, as the same Westword report on the group's expansion noted. The izakaya is expected to open in October or November of this year.
The Broomfield project was in the works well before its January closure announcement. Local outlet WhatNow reported in August 2025 that SYC Concepts had begun developing the venue under the preliminary name Yuzu by SYC, describing it then as a refined dining experience centered on Japanese culinary artistry. That timeline suggests the Go Fish-to-Yuzu transformation had been years in the planning rather than a sudden pivot.
Chubby Fish Sushi Expands to Aurora and Arvada
Crossland's Chubby Fish Sushi brand is set to add two new locations as part of the rollout. The Aurora outpost, located at 14302 E. Cedar Ave., Unit B, is expected to open in November or December 2026. An Arvada location is also planned, though its exact address has not yet been announced; that one is expected to follow in February 2027.
Meanwhile, Miya Moon — the concept centered on dim sum, tapas-style dishes and Asian-inspired small plates — is opening its fourth location at 6365 E. Hampden Ave., Suite 101, in Denver, with a target opening of September 2026. Taken together, the Denver Business Journal has characterized the six-restaurant push as spanning concepts ranging from dim sum to sushi to Japanese izakaya dining, per the same WhatNow report.
Elevated Fish and a Crowded Cherry Creek Market
Crossland's push toward higher-end dining has already produced at least one showcase project. In July 2026, she opened Blossom by SYC at 1691 Central Street in Denver's Lower Highland neighborhood, a concept blending elevated Chinese cuisine with French culinary techniques, according to a Denver Metro Moves report from the Denver Gazette. Her existing Sushi by SYC concept also runs a specialized dry-aging program for tuna, salmon, and yellowtail, led by former Masa Takayama chef Min Koo Lee, according to DiningOut.
The new Cherry Creek pair arrives in a neighborhood that's already become a battleground for upscale Japanese dining. Austin-based Uchi expanded its Denver footprint in February 2026 by opening sister concept Uchiko at 299 Fillmore Street in Cherry Creek North, according to KM Luxury Homes. That competitive backdrop comes amid a broader boom: DiningOut has reported that more than 15 new Asian restaurants opened across the Denver metro area during 2025 alone, part of an acceleration in the region's Asian dining scene that Crossland's six-restaurant expansion now feeds directly into.
