Disney Springs is getting a savory sequel to its most famous cookie stop: Six Ravens, a new grab-and-go concept from Gideon’s Bakehouse, soft opens Monday. Instead of another dessert counter, the tiny, darker neighbor will serve stuffed yeast-roll sandwiches, smashed potatoes, local beer and one very Gideon’s dessert.
The soft opening arrives with a line-management plan already in place. According to Orlando Sentinel, arriving guests will be placed into a first-come, first-served queue, with staff managing the flow to reduce time spent waiting in line; a virtual queue is planned for later.
Six Ravens Turns Medieval Hand Pies Into Disney Springs Street Food
Disney Springs describes the signature Coffyn as a sandwich filling fully encased in a house-made yeast roll, with the name borrowed from an old term for hand pies. The quick-service concept also leans into Tower of London raven lore, giving the new shop the same storybook weirdness that helped make Gideon’s a destination rather than just a bakery.
The Walt Disney World menu lists seven Coffyns at $10.99 each, including a cheeseburger-filled Peasant’s Patty, pesto chicken Villain of Valentina, pulled pork-and-mac-and-cheese Wizard’s Wonder and grilled cheese Moreish Monk. The Rooster’s Roar, a bacon, egg and cheese version served in an everything-seasoned roll, is available from 9 a.m. until sellout, with a vegetarian potato, egg and cheese option.
The menu also includes baked smashed potatoes with honey mustard, a Gideon’s chocolate chip tart filled with chocolate fudge and raspberry jam, house root beer and local beer. The beer list includes offerings from The Ravenous Pig, Crooked Can and Sideward Brewing, keeping the new concept tied firmly to the Central Florida food scene.
Local Orlando Restaurants Supply The Flavor
Six Ravens is designed as more than a side project for Gideon’s. As Orlando Sentinel reports, the Coffyn collaborations feature local names including Red Panda Noodle, Pink Salamander, Papi’s Burritos, Smoke & Donuts and Pizza Bruno, with more desserts and bakery collaborations expected as the concept develops.
The idea has been in the oven for a while. Orlando Weekly previously reported that owner Steve Lewis spent years testing savory fillings with Orlando chefs, with Six Ravens taking over the former Art of Shaving space just a few doors from Gideon’s Bakehouse.
That proximity could make Monday especially interesting for hungry Disney Springs regulars. Gideon’s own Disney Springs guide warns that its cookie shop can draw lines before opening and frequently uses a virtual queue, so Six Ravens may not have to wait long before developing queue lore of its own.
