Vesta Coffee Roasters is opening its fifth Las Vegas location at 7120 Blue Diamond Road, Suite A-100, in the Southwest valley, marking a decade since the roaster first opened its doors in the Arts District. Owner Jerad Howard announced the new shop in a Monday Instagram post, framing it as a milestone moment for the brand he started from scratch in 2016.
“Vesta is starting store number 5 after 10 years,” Howard said, according to the Las Vegas Review-Journal, adding that the company is “spreading specialty coffee and tasty treats” across the valley. The Review-Journal reports Vesta already runs three other Las Vegas locations beyond its original Casino Center Boulevard roastery, including a West Sahara Avenue shop near Summerlin and two outposts inside Durango Casino & Resort — one in the Eat Your Heart Out food hall and another grab-and-go cafe in the resort lobby.
Before he was roasting beans, Howard worked as a dishwasher, line cook and web designer, and later served as Head of Product at tech infrastructure firm Switch, according to StarChefs. He started roasting coffee as a home hobby in 2014, two years before opening Vesta's original storefront in the Arts District. That career pivot, along with a decade spent building Vesta into a multi-location brand, earned him a StarChefs Las Vegas Rising Stars Restaurateur Award in 2025 or 2026, per the same profile.
From a Single Roastery to a Valley-Wide Brand
Vesta's original store on South Casino Center Boulevard still houses its on-site roastery, per the Review-Journal, and the menu there spans coffee, espresso drinks, lattes, teas, soup, salads, toasts and baked goods. The broader Vesta lineup today includes coffee drinks, teas, baked goods, savory bites, bagged coffee and merchandise, all listed on the company's site, vestacoffee.com.
The company's first expansion came in 2020, when it opened a second location on West Sahara Avenue near Summerlin. That site established a central bakery and pastry production facility with a drive-thru, according to StarChefs. Three years later, Vesta hired Mexico City native Julissa Escobedo — a pastry chef who had previously baked for Bellagio, MGM Grand and Wynn — to grow the pastry menu past 10 items, including baklava croissants, churro cruffins and tequila lime tarts, as reported by the Las Vegas Weekly.
That same stretch brought Vesta into the Durango Casino & Resort in Southwest Las Vegas in late 2023, with one outpost inside the Eat Your Heart Out food hall and a separate grab-and-go cafe in the resort lobby, according to WhatNow. Vesta also sources single-origin beans directly from partner farms in Costa Rica, El Salvador, Guatemala, Ethiopia and Colombia, maintaining long-term relationships with individual growers such as Costa Rican farmer Minor Jiménez, according to the company. Beyond its cafes, Vesta distributes bagged specialty coffee through grocery chains including Whole Foods Market and Sprouts Farmers Market alongside direct-to-consumer online sales, per a report from the Station Casinos blog.
Why Southwest Las Vegas Is the Next Bet
The new Blue Diamond Road site sits within a new retail development near Rainbow Boulevard, adjacent to a planned 340-unit residential development, according to project documents from Dapper Development. The Blue Diamond Road corridor itself carries an estimated 46,000 to 52,000 vehicles daily, serving fast-growing master-planned communities such as Mountain's Edge and Rhodes Ranch, per a Realmo analysis of the area.
That suburban commuter traffic stands in contrast to the challenges Vesta's original Arts District neighborhood has faced in recent years. Ongoing road construction along Casino Center Boulevard has created major foot-traffic problems for nearby businesses, and it was cited as a factor when inclusive cafe Dig It! Coffee Co. announced its closure earlier this year, as Hoodline previously reported.
Vesta's expansion pattern over the past several years — from downtown roastery to Summerlin bakery hub to twin Durango Casino & Resort concepts and now a Southwest plaza — tracks a broader shift toward high-growth suburban corridors where new rooftops and heavy commuter counts offer steadier customer flow than downtown's construction-plagued streets. The fifth store at 7120 Blue Diamond Road, Suite A-100, will be Vesta's first standalone Southwest storefront outside the Durango resort, arriving as the company marks its 10th anniversary in 2026.
