Aurora's Stanley Marketplace is getting an Italian counter-service concept called Sorella, targeting a mid-November opening at 2501 Dallas St. The restaurant will serve Italian-style sandwiches, pastas, charcuterie, and shareable plates, built for everything from quick lunches to date nights and larger gatherings.
The name Sorella means sister in Italian, and it comes from the same team behind Boychik, the Mediterranean concept that co-founders Charles Troup and Chase Devitt already operate at Stanley Marketplace. As WhatNow reports, Troup said the new spot is designed to work for lunch and dinner as well as date nights, positioning it as a flexible addition to the marketplace's food lineup. No exact opening date has been announced beyond the mid-November target, according to the same report.
A Familiar Venue for an Established Duo
Troup and Devitt aren't newcomers to Stanley Marketplace. The pair opened a second Boychik location there in February 2024, taking over the space vacated by former tenant Chook Chicken, as documented by Denver Westword. Boychik has grown from a single food stall at Avanti Boulder in 2020 to a second location at Stanley Marketplace.
The two later relocated to Colorado together, working at Boulder's Oak at Fourteenth before striking out on their own, according to In Good Taste Denver.
A New Addition to the Marketplace's Food Lineup
Sorella arrives as Stanley Marketplace itself is in flux. The 140,000-square-foot venue, a former Stanley Aviation manufacturing plant built in 1954 on nearly 23 acres, was converted into a multi-tenant hub in late 2016, according to Visit Denver. In September 2026, real estate reports confirmed the property sold to a local buyer for $40.9 million, per Pinette Realty Group. The marketplace's roughly ten-year run has included departures such as Chook Chicken, Mondo Market, and Comida Cantina, Denver Westword notes. Even so, the venue continues to retain James Beard-recognized anchors like Annette, suggesting the food hall's core draws remain strong even as smaller concepts rotate in and out.
Growth Around Stanley Marketplace
The Sorella opening also lands amid broader change in the surrounding neighborhood. In September, officials put out a solicitation seeking a master developer for redevelopment or reuse of the nearby 145-acre Lowry Campus, a project Hoodline detailed in its coverage of the Lowry Campus redevelopment push. That nearby growth adds context to why operators like Troup and Devitt are betting on a second concept in the same venue rather than looking elsewhere.
For now, Sorella's exact opening date remains unannounced beyond the mid-November target, according to WhatNow's report. Once open, it will give Stanley Marketplace shoppers and diners an Italian option to pair with the Mediterranean fare already on offer at Boychik, also at Stanley Marketplace.
