El Tigre Coffee Roasters is set to open a permanent Austin shop Friday, September 25, at 2909 E. 12th St. The 520-square-foot bungalow replaces the roaster’s trailer setup, where a small water tank and finicky power specifications had limited operations.
The bungalow had been ready for a year and a half, according to CultureMap Austin, while owner Tatanka Guerrero waited for city paperwork that included a change of use. A February 2026 guide from Permit Place estimates initial plan reviews at 15 to 25 business days; it says resubmittals and change-of-use reviews can add weeks or months. Those general estimates do not establish how long El Tigre’s review took or what caused its delay.
East 12th’s Past
East 12th’s development has a longer history separate from this opening. A 2017 Austin Monitor report on an earlier city revitalization effort counted nine completed projects on East 12th, excluding private development, compared with 11 on East 11th.
El Tigre began as an Austin trailer in 2019 and later opened a San Antonio brick-and-mortar in early 2025, CultureMap reported. The St. Paul Square cafe, at 123 Heiman St., occupied the former Vice Versa coffee shop, according to the SA Examiner. Guerrero has since sold that location. CultureMap reports that Austin will be El Tigre’s only current location, with the brand planning pop-ups and partnerships in San Antonio as Guerrero looks for another site there.
A Compound Built for Community
The new bungalow sits inside a small compound Guerrero developed himself, a cluster of structures connected by adjoining yards that he intends as a hub for community, the CultureMap piece explains. El Tigre's neighbors in the compound include Slowpoke Tattoo and Cork & Screw, with Sammataro Pizza nearby as well.

Guerrero’s Restaurant Background
Guerrero is Chilean-turned-Texan, and Al Campo was his first restaurant, in Marfa. The SA Examiner mentions Trona as a cocktail bar in Austin.
What's on the Menu
At the new bungalow, El Tigre will roast its coffee in-house and serve it alongside a signature latte, Mexican drip coffee with cinnamon, strawberry matcha, and an affogato made with Blue Bell ice cream, per CultureMap. Weekdays will bring pastries, tacos and bagels, while weekends are set aside for local food collaborations. The shop will offer both indoor and outdoor seating plus window service, open daily from 7 a.m. to 3 p.m.
Guerrero told CultureMap Austin that the new shop's focus is simple: hospitality, brews and beans. It's a modest mission statement for a bungalow that took a year and a half of waiting to finally open its doors.
