
The Fifth String’s official website continues to identify 1490 Eudora St. in Denver as the restaurant’s upcoming address. It lists the hours as “coming soon” and does not provide an opening date, while still displaying the restaurant’s phone number and reservation, menu, gallery, and team sections.
Records and earlier reporting
A Colorado liquor-license record lists Little Pig LLC at the same Eudora Street address, according to WhatNow. That report also found that the website continued to direct prospective diners to the location without announcing when service would begin.
The Eudora Street project followed earlier Denver locations. The Fifth String opened in LoHi in August 2020 and left that space in August 2023, according to The Denver Post. The restaurant later operated temporarily on Larimer Street before planning the move to east Denver.
The Eudora Street project
Chef and co-owner Amos Watts had secured the lease for 1490 Eudora Street, near East Colfax Avenue, Westword reported in August 2024. Watts died suddenly in April 2024 at age 43, shortly before the planned reopening. The Denver Post later reported that construction delays had pushed the anticipated opening to summer 2025 and that his wife and business partner, Jessica McCabe, was continuing the project.
That target has passed without a confirmed opening date in the available reporting. The restaurant’s website still points diners to Eudora Street, but the current public information does not establish whether the project has been delayed again or otherwise changed.
