Per Food & Dining Magazine's account, national culinary publication Bon Appétit had already featured TANA as one of the most anticipated U.S. restaurant openings for Summer 2026 ahead of its launch, a mention that reportedly helped fuel elevated local reservation demand once the doors opened. The name itself functions as an acronym for “Taiwanese New American,” while also paying tribute to a mountain plant native to Taiwan, according to StyleBlueprint.

The idea traces back to 2019, when Chef Ming Pu and Courtney Pu dined at Win Son, a Taiwanese-American eatery in Brooklyn, while visiting New York for a guest cooking event. The Local Palate reports that the experience sparked the couple's desire to bring a similar blend of nostalgic and modern Asian flavors back home to Kentucky. That inspiration eventually took shape at 983 Goss Ave. in Germantown, a historic property that previously housed the long-running German restaurant Eiderdown and, briefly, Redbud Dining Room, according to LEO Weekly, which had chronicled Eiderdown's status as a longstanding dining staple in the Schnitzelburg and Germantown area before its closure.

A Chef With Deep Louisville Roots and National Recognition

Chef Ming Pu's own story adds another layer to TANA's arrival. Born in Taiwan, he was raised there until age six before moving to Canada and eventually settling in Louisville in 1999, per the James Beard Foundation. He went on to work in high-profile local kitchens, including The English Grill at The Brown Hotel and The 502 Bar & Bistro, before striking out on his own with TANA.

His national profile grew well before the restaurant's opening. Ming Pu made guest appearances cooking at the James Beard House in New York and participated in the James Beard Foundation's Policy for Change Boot Camp, according to a report on Medium.

What's on the Menu, and When to Go

TANA's opening menu blends Taiwanese classics with Southern technique and reflects Kentucky, American South, and professional-kitchen influences. Dishes include Mapo Tofu Cavatelli, Taiwanese Fried Chicken with plum salt, and three-cup tuna tartare served with scallion pancakes, per the same Adventurist Magazine report.

Diners looking to try it for themselves can find TANA serving dinner six days a week from 5 p.m. to 10 p.m., closed on Tuesdays, according to official 2026 business listings. The space includes a bar, a patio, and a private dining room, giving Germantown a fresh option for modern Asian-American cuisine in a building with deep neighborhood history.
