B's Bagels & Butters has outgrown its tiny Uddenberg Lane storefront so badly that staff have taken to laying seating mats on the lawn outside just to handle the overflow crowds. Now the beloved Gig Harbor bagel shop is planning a move to a much bigger home: the former O'Looney's Irish Pub building at 3222 56th St., a spot more than double the size of its current space.
Owner Brittany Erwin is moving the shop into the former O'Looney's Irish Pub building after it closed in May 2026, a turnkey restaurant space that already came with commercial kitchen equipment and furniture, according to Gig Harbor Now. As WhatNow reports, the shop is relocating from 3308 Uddenberg Ln. to the new address, with renovations just getting underway and Erwin targeting a spring 2027 opening — though she's cautioned the timeline could still shift.
Gig Harbor Now reports the current Uddenberg Lane location is about 1,300 square feet; WhatNow reports that about 1,200 square feet are usable for the business. The new building will offer roughly 3,600 square feet, more than doubling the shop's usable footprint, with expanded seating and a larger parking lot that Erwin expects will make visits easier and quicker for customers coming and going.
From Sellout Lines to a Search for Space
The cramped quarters have been a problem almost since day one. When B's Bagels & Butters first opened its doors in March 2023, demand was so intense that the shop sold out of its hand-rolled bagels within two hours. During the first few weeks, lines stretched out the door, and on one recent Saturday a line wrapped around the corner, as Gig Harbor Now reported. The shop had only moved into its Uddenberg Lane suite in 2022 before opening the following year, and it didn't take long to outgrow even that space.
Erwin began developing the concept in 2021 after spending five years working as a chef in Tacoma, according to WhatNow's account. Her culinary background runs deeper still: she earned a Culinary Arts degree from Johnson & Wales University and worked as a chef at Cooks Tavern in Tacoma, according to a profile by Paige Schulte, which notes Erwin originally set out to open a fine-dining restaurant before shifting her focus to bagel craftsmanship.
Wholesale Bagels and an Expanded Menu on the Way
The bigger kitchen isn't just about seating — it's what will finally let B's Bagels & Butters begin selling wholesale bagels to local coffee shops, something Erwin said customers have been requesting since day one, per WhatNow. The move also gives her room to expand the menu well beyond the shop's small-batch, hand-rolled East Coast-style bagels, cream cheese schmears, compound butters, and breakfast and lunch sandwiches. Plans include soups, sides, pastries and other baked goods, daily challah bread, challah French toast, and eggs fried to order for breakfast sandwiches.
The shop will keep pouring coffee from Bluebeard Coffee Roasters, which supplies its El Capitan blend for drip and espresso along with whole bean bags for retail sale, per the B's Bagels website. It also plans to continue stocking products from local businesses and displaying artwork by local artists.
A Personal Touch Behind the Counter
Erwin's ties to the community run beyond the cash register. She previously worked as a chef for the PTSD foundation's Warrior PATHH program, cooking for veterans and first responders — an experience that inspired her to launch a military and first-responder discount program at the shop, according to the Schulte profile, which also notes Erwin's husband is a local Gig Harbor police officer.
Leaving the Waterfront, Gaining Elbow Room
The new location sits outside Gig Harbor's historic downtown waterfront district, a trade Erwin appears willing to make for the parking and space the 56th Street building offers.
The relocation also comes amid new bagel-shop plans in Tacoma. Bagel's Bagels invades Sixth Avenue in Tacoma, with the shop planning a summer debut at 2805 Sixth Avenue in the space recently occupied by Locust Cider — while B's Bagels & Butters looks to cement its own foothold in Gig Harbor.
