Hat Creek Burger Company, the Austin-born burger chain known for its Texas beef patties and family-friendly playscapes, is planning its first restaurant in Leander. State filings show the 3,438-square-foot restaurant would rise along Crystal Park Trail, in a rapidly developing corridor about 30 miles north of Austin.
According to MySA, Hat Creek has filed project paperwork with the Texas Department of Licensing and Regulation for the Leander site, part of the chain's continued push beyond its home turf. The company already operates more than two dozen locations in and around Texas, having expanded into the Dallas-Fort Worth, Houston and San Antonio metropolitan areas since its founding. Nearby businesses in the area include an H-E-B Plus!, Layne's Chicken Fingers, and the H-E-B Center at Cedar Park, according to the same report.
Hat Creek's roots trace back to 2008, when former University of Texas basketball player Drew Gressett launched the brand as a single food trailer parked behind an Austin bar, according to The Daily Texan. Gressett, who graduated from UT in 2004, opened the brand's first brick-and-mortar restaurant in 2011. The chain's name is part of its branding.
What the New Restaurant Will Look Like
Hat Creek is a fast-casual chain. The chain also offers tater tots, sweet potato fries and chicken nuggets.
The TDLR filing, identified as Project TABS2027000183, estimates construction costs at roughly $1.5 million, with work slated to begin in early November and wrap by early April 2027. Those numbers, however, are preliminary. TDLR filings reflect developer estimates that remain subject to change amid permitting and construction delays common in fast-growing suburban markets like Williamson County.
Leander's Population Boom Fuels the Rush
Leander is one of Williamson County's fastest-growing communities. Leander's median household income is included in 2024 American Community Survey data compiled by Census Reporter.
That growth and buying power help explain why the restaurant site sits so close to Northline, a 116-acre, $1 billion master-planned downtown district in Leander, according to Community Impact. The City of Leander has backed the project with its own investment, approving an economic development agreement in February with St. John Properties and Northline Leander Development Co. that includes a $4 million loan toward a 95,000-square-foot office building intended to house future City Hall offices, with the city planning to lease 40,000 square feet for administrative operations and council chambers.
Joining an Already Crowded Dining Corridor
Hat Creek's filing along Crystal Park Trail places it within an increasingly crowded restaurant scene taking shape along Leander's Ronald Reagan corridor. Reporting by WhatNow shows the area already has a planned Hat Creek location. Hoodline previously reported on Hopdoddy's Leander filing earlier this year, part of the same wave of fast-casual growth that has also brought Atomic Wings and a second Wingstop location to the city in recent months.
Hat Creek has expanded into North Texas, opening locations in the Dallas-Fort Worth metro area, before growing its footprint into Houston and San Antonio. Its arrival in Leander now marks the brand's first restaurant in Leander, following the same blueprint of trailing residential growth into newly built commercial corridors.
