A new 125-seat restaurant is opening on Birch Street in Kennett Square with a business model that stands out even before the first plate hits the table: every dollar of profit is earmarked for local nonprofits. Opus, located at 201 Birch Street, will hold a ribbon-cutting and community open house from 4 to 6 p.m. on September 10, and the restaurant is already taking reservations for opening weekend and beyond.
The restaurant is operated by Square Roots Collective, which intends for Opus to combine culinary programming, local art, and community gathering space, according to Chadds Ford Live. The 5,100-square-foot space will serve New American cuisine with a menu of small plates, bar snacks, entrees, and cocktails that changes seasonally. Per the organization's statement, Opus profits will be reinvested in community improvements and local nonprofits, specifically supporting United Way of Southern Chester County, Family Promise of Southern Chester County, and Brandywine Red Clay Alliance.
How the Profit-Donation Model Actually Works
That giving structure isn't improvised. Under its Square Roots Community Initiative framework, the organization runs commercial venues through a social-enterprise model in which businesses pay standard taxes before donating 100 percent of net profits to a 501(c)(4) entity, according to Square Roots Collective. That entity has distributed more than $545,000 in grants to Southern Chester County nonprofits since 2022, and the initiative traces back to 2019 with funding from the Bontrager family. Square Roots Collective also funds cultural programming such as Voices Underground, which hosts regional events including Juneteenth celebrations and Three Kings Day gatherings, all supported through the same business profit distributions.
Opus isn't the collective's first venture on this stretch of Birch Street. The organization previously transformed a historic industrial space into The Creamery of Kennett Square, a community gathering space and outdoor venue that anchored early corridor events, and it also opened The Francis Hotel & Suites, a second boutique hotel in downtown Kennett Square. Stephanie Almanza said Opus represents the latest evolution of Birch Street, per Chadds Ford Live's report.
Menu Leans Into Local Mushroom Country
Executive Chef Matthew Anderson leads the Opus culinary program after previously heading culinary programs for Longwood Gardens and Winterthur, according to a Facebook post detailing his background. The inaugural menu includes Kennett Square mushroom bisque, Parisian herb gnocchi with local mushrooms, butternut squash agnolotti with pomegranate molasses, seared dayboat scallops, a local artisan bread board with roasted garlic, and apple tarte tatin. Beau Fournier, who brings 15 years of hospitality experience most recently from Sovana Bistro and The Pear, will lead the Opus front of house.
The heavy presence of mushrooms on the menu isn't incidental. Southern Chester County produces roughly 60 percent of the total U.S. mushroom crop, yielding nearly 400 million pounds annually and sustaining Kennett Square's reputation as the Mushroom Capital of the World, according to Lancaster Farming. Local mushroom cultivation dates back to the late 19th century, when growers used the region's carnation bed greenhouses. Mushrooms remain Pennsylvania's top agricultural cash crop, though the American Mushroom Institute notes growers continue to face margin pressures from substrate costs, labor shortages, and crop threats — pressures serious enough that federal lawmakers introduced protective legislation for Pennsylvania mushroom growers in 2023.
Art Woven Into Every Wall
Opus features art throughout the restaurant, including hand-painted murals created by Jacintha Kruc and Freiman Stoltzfus, along with rotating selections of work by area high school students. The centerpiece will be a large exterior mural by Philadelphia muralist Phillip Adams, installed this month, that will reference the history of Birch Street. Adams previously created room artwork for the neighboring Artelo hotel and led the 2026 Reflections of Our Roots community art installation along the Kennett Greenway, according to a Square Roots Collective announcement documented via Kennett Greenway, and has painted public murals across Pennsylvania for more than 20 years.
Opus sits directly next to the Artelo hotel on Birch Street, a 14-room contactless boutique property that opened in July 2024, where each guest room contains an immersive original mural by a regional artist and custom furniture from local makers, according to Kennett Collaborative. Together, the two properties illustrate how Square Roots Collective has built an art-and-hospitality hub along a corridor once dominated by industrial and mushroom-packing facilities.
A Corridor Remade Block by Block
Opus's opening lands just months after the Borough of Kennett Square and local business partners completed the multi-year Birch Street Transformation Project, celebrated in June with a public ribbon-cutting and streetscape crawl that added ADA accessibility upgrades, new sidewalks, and bike connections, per Kennett Greenway. Kennett Square-based GreenRoots Design Firm managed the streetscape landscaping along the corridor, planting native trees, perennials, and ornamental grasses to soften the once-industrial stretch ahead of this summer's venue openings, the firm said in its own account of the project.
The restaurant arrives amid a broader wave of downtown investment. Hoodline previously reported on a $34 million buy tied to an office-to-residential conversion on State Street, part of the same momentum reshaping downtown Kennett Square. Front-of-house lead Beau Fournier's colleague Kris Stover has also worked at Longwood Gardens, Winterthur, and the House of William & Merry, rounding out a staff with deep ties to the region's premier hospitality and horticultural institutions.
