A sandwich shop born from a shuttered Michelin-starred restaurant is headed to Woodland Hills. Bread Head plans to open its fourth Southern California location at 6316 Topanga Canyon Boulevard, Suite 1180, inside Topanga Village, with a target opening date of December 2026.

From Fine Dining to Focaccia

The sandwich concept was founded by chefs Alex Williams and Jordan Snyder, according to WhatNow. The pair met while cooking under chef Ludo Lefebvre at Trois Mec, a 26-seat Hollywood tasting menu spot that held a Michelin star before it closed permanently in July 2020 during the COVID-19 pandemic, according to the Los Angeles Times. Trois Mec had opened in 2013 inside a former strip-mall pizza shop and won widespread national acclaim before shuttering.

Williams and Snyder developed and refined the Bread Head recipes through pop-ups and catering events before ever opening a storefront, per WhatNow's report. That recipe testing eventually became the brand's signature: house-baked focaccia baked fresh throughout the day.

A Fast-Growing Southern California Chain

Bread Head's flagship restaurant opened in Santa Monica in June 2024, and the company has since expanded quickly, adding outposts in Manhattan Beach in June 2025 and Westwood in November 2025, according to a PR Newswire release carried by Morningstar. Woodland Hills will mark the chain's fourth location. The company was formalized as Bread Head Restaurant Group in 2023 when Williams and Snyder partnered with Greg Willsey, founder and CEO of Venice Brands, and Michael Pasternak, former director of operations for Night + Market, the Los Angeles Times reported. Willsey now serves as CEO of the restaurant group, while the group was formed to open Bread Head sandwich shops across the country, per WhatNow.

Venice Brands' portfolio also includes organic date company Joolies and health brand KinderFarms alongside its restaurant investments, according to Forbes.

What's On the Menu

According to WhatNow, Bread Head makes its sandwiches with house-baked focaccia and sources ingredients from local suppliers. The lineup includes a Calabrian turkey, muffaletta, roast beef, mozzarella, combo grinder, BLT, tuna salad, chicken salad, and turkey pesto, alongside breakfast sandwiches and burritos, a vegan wrap, and kids' sandwiches. The shop also serves chips, sweets, and drinks, plus daily specials: meatball sandwiches on Mondays, roast pork and broccoli rabe on Tuesdays, Cuban sandwiches on Wednesdays, Reubens on Thursdays, and sausage and peppers on Fridays.

The chain also serves made-from-scratch sides. The chain's Mozzarella Sandwich, featuring fresh cheese, avocado, alfalfa sprouts, pickled red onion, and za'atar spread on house-baked focaccia, was named one of the 26 best dishes in America by the New York Times, following earlier praise from the Los Angeles Times, which called the business “L.A.'s next great sandwich shop,” according to Time Out. WhatNow reports Bread Head has a liquor license application pending for the Woodland Hills location and announced the new outpost via social media.

Filling a Turn-Key Space at a Changing Center

The Woodland Hills suite Bread Head is taking over previously housed plant-based chain Veggie Grill, which closed six California locations in mid-2023, including its Topanga, Downtown LA, and Irvine Spectrum sites, to rightsize its store count amid post-pandemic shifts in hybrid work, according to Patch. Topanga Village functions as a shopping, dining, entertainment, and leisure center in Woodland Hills, with dining tenants including Cava, Bacio di Latte, Dan Modern Chinese, EMC Seafood, Eureka!, Joey's Woodland Hills, PitFire Pizza, Sweetfin Poke, and Wokcano, plus retail tenants Costco, Crate & Barrel, Fabletics, REI, and Sur La Table, per WhatNow.

Taking over a turn-key, second-generation restaurant suite allows Bread Head to expand efficiently into the San Fernando Valley.

Bread Head's arrival adds to a wave of dining activity in the corridor: Durango Cocina is also moving into Topanga Village, taking over another second-generation restaurant space at the same address, while Original Tommy's has separately announced plans for a new Woodland Hills location as fast-casual concepts continue to move into the San Fernando Valley dining scene.
