A new mobile coffee trailer has parked itself at Point Tiburon Plaza, offering a quick grab-and-go option. Paradise Coffee, opened by owners Sam Cook, William Caamal and Juan Carlos, began serving breakfast burritos, waffles, Cubano sandwiches and coffee in late April from an 18-foot trailer near the plaza's bus stop and flower-shop gazebo at 1775 Tiburon Blvd.
The trailer's arrival followed months of municipal review. According to The Ark, the Tiburon Planning Commission voted 3-0 on February 25 to grant a conditional use permit allowing Paradise Coffee to operate as a mobile trailer at Point Tiburon Plaza. The review included a December 2025 staff report.
Under the permit's terms, Paradise Coffee can run daily from 6 a.m. to 4 p.m. with no more than two to three workers on-site. Cook has said the plaza was missing a quick place to grab a bite to eat, and the trailer is designed around that gap: the goal is food customers can grab and go within five minutes or less.
A Menu Built for Commuters on the Move
The menu leans into speed without skimping on variety. Alongside the breakfast burritos and waffles, Paradise Coffee serves chicken cordon bleu sandwiches, Italian sodas and its Cubano, all part of its quick grab-and-go menu.
The coffee itself comes from Moschetti Artisan Roaster, a Vallejo-based roaster whose founder, French native Fabrice Moschetti, moved to California in 1989 and moved the business to Vallejo in the early 1990s. The roaster makes deliveries to Bay Area restaurants and has built a following across the Bay Area, in part through free public coffee tastings it hosts every Saturday, as detailed by SFGATE.
Paradise Coffee also has a dessert case. The trailer's sweets give its menu another option beyond its coffee and savory food.
Why the Location Works
The spot at Point Tiburon Plaza was not an accident. Town of Tiburon planning documents note that a bus stop sits beside the plaza. That foot traffic, drawn from tourists, cyclists and locals alike, gives a grab-and-go model room to work in a way a traditional sit-down cafe might not.

Zoning Rules and a Changing Plaza
The trailer's approval also fits within the town's broader zoning philosophy. The town's zoning framework includes resident-serving uses in Neighborhood Commercial zones, and that framework is part of the context for the plaza's changes.
