Reservations and service
Sushi Bby Omakase opened at 1832 E. Second St. in Scotch Plains and offers reservations-only dining at a 12-seat counter. MyCentralJersey reported that reservations were filled through October. The restaurant does not offer walk-in service or takeout, according to the same report: MyCentralJersey.
The restaurant announced its Aug. 20 opening with three 90-minute seatings on weekdays and four on weekends. The listed times are 5:30 p.m., 7 p.m. and 8:30 p.m. daily, plus a 10 p.m. seating on Fridays and Saturdays. It operates as a BYOB restaurant, according to the launch announcement: Facebook.
Menu and pricing
Diners can select a 12-course tasting for $80 or a 17-course version for $120, MyCentralJersey reported. The restaurant prepares fish for the reservations scheduled that day, rather than producing a takeout menu. Five components of the longer tasting change weekly, while the complete menu is revised three times a year. Items reported on the menu have included tuna belly, caviar and foie gras: MyCentralJersey.
The ownership team
Sean Zhao, Carmen Gumina and Po Chen own the restaurant. MyCentralJersey reported that Gumina and Zhao previously worked as omakase chefs at Sushi by Bou’s W Hoboken location, while Gumina and Chen worked at Hadaka in Asbury Park. New Jersey Monthly describes Hadaka as a 12-seat omakase restaurant that opened in July 2024: New Jersey Monthly.
A compact, informal format
