The closure leaves the Lexington-founded chain with just two locations left anywhere, both back in its hometown at Hamburg and Palomar Centre. The Bardstown Road location, at 3012 Bardstown Road, had been the last Vinaigrette storefront standing in Jefferson County, according to the same report. That original location, along with a second Louisville restaurant at 4055 Summit Plaza Drive, had already closed by 2025, per the Courier Journal, leaving the chain with just one Louisville outpost roughly a year before the Bardstown Road closure ended its presence in the city entirely. The Hurstbourne Parkway space has since been listed as European Patisserie, according to a discussion on the Louisville Hot Bytes forum.
Vinaigrette's roots trace back to Lexington, where it opened its first location in 2014, per the Courier Journal. The chain's Louisville exit came after changes to its Central Kentucky footprint in recent years. The chain also experienced a downtown Lexington closure in September 2025. A year before that, in 2024, Vinaigrette closed its Townley Center location on Leestown Road in Lexington after a decade in that neighborhood, according to the chain's Facebook page.
Vinaigrette's Footprint Has Shrunk
Vinaigrette's footprint has since become much smaller, with the chain now consolidated back to its two Lexington locations at Hamburg and Palomar Centre.
The brand emphasized fresh, locally sourced food. That emphasis was part of the chain's identity, even as its footprint later contracted beyond Central Kentucky.
A Turbulent Market for Fast-Casual Salads
Vinaigrette's contraction fits into a rockier period for chopped-salad concepts across the region. Green District Salads, a Louisville-founded chain that launched in 2017, filed for Chapter 11 bankruptcy protection in August 2023 after an aggressive multi-state franchise push collided with financial stress and rising interest rates, according to Restaurant Business. That bankruptcy underscored how quickly the fast-casual salad segment's growth ambitions can outpace its finances.
Even as homegrown chains have struggled, national players continue eyeing the Louisville market. Minnesota-based Crisp & Green announced in July 2024 that it planned to open four new locations across the Louisville metro area starting in 2025, according to a report from FranchisePressReleases.com cited by Oakscale. That incoming competition arrives as one of its original local players heads home to Lexington for good.
