
A new all-you-can-eat Japanese barbecue concept is moving into one of downtown Bellevue's most recognizable restaurant spaces. Wagyu House plans to open on Level 2 of Lincoln Square North, taking over the former Din Tai Fung location near Lucky Strike, with beef cuts ranging from American and Australian wagyu up to Japanese A5.
The concept comes from Chubby Group, which runs Wagyu House alongside its other brands, according to Downtown Bellevue Network, including Chubby Cattle, The X Pot and Niku X. The Bellevue location will mark Chubby Group's first restaurant in Washington state, joining existing Wagyu House outposts in Atlanta, Chicago and Houston. Chubby Group has filed plans to fill the 6,685-square-foot space on the second floor of Lincoln Square North, according to Chubby Cattle.
What's on the Menu
The restaurant will serve all-you-can-eat yakiniku, a style of Japanese barbecue in which diners grill their own meat at the table. The report also notes the restaurant is planned to offer all-you-can-eat wagyu hot pot and Japanese barbecue alongside à la carte items. Beyond the grilled meats, Chubby Group's description of its Atlanta location points to the kind of spread Wagyu House tends to build around its all-you-can-eat format, featuring yakiniku, sushi, A5 Wagyu beef and premium seafood, per Chubby Group.
Pricing details specific to the Bellevue location haven't been released, but Wagyu House's Houston outpost offers a useful reference point for how the chain structures its menu. That location runs four pricing tiers — silver, gold, diamond and black diamond — with higher tiers unlocking more premium cuts, and meal prices there range from about $55 for silver up to roughly $100 for diamond, not including alcohol or tip, according to CultureMap Houston.
A High-Profile Space Changes Hands Again
The space Wagyu House is moving into has a notable history at Lincoln Square. Din Tai Fung originally opened there in November 2010 as the Taiwanese dumpling chain's second U.S. location, occupying about 7,000 square feet and seating 220 people. The chain later filed plans to relocate into the ground-floor space at 10455 NE 8th Street, previously occupied by Maggiano's Little Italy, opening a new 17,000-square-foot restaurant there on April 16, 2024, designed by Rockwell Group and featuring two private dining rooms.
Wagyu House's arrival fits into a broader stretch of openings underway across the shopping and dining complex. The Bellevue Collection is seeing several new stores and restaurants debut, along with some favorites reopening in remodeled spaces, before the end of the year, per the same Downtown Bellevue Network report. Chubby Group itself is expanding quickly on a national scale, with its restaurant count projected to grow to as many as 100 locations by the end of 2026, according to CultureMap Houston's reporting, though that figure reflects the company's broader portfolio rather than Bellevue specifically.
What's Still Unknown
Wagyu House is targeting an opening at the end of 2026, but no specific date, hours, reservation policy, or Bellevue-specific menu pricing has been released. It also remains unclear whether the Bellevue location will carry over design elements seen at other Wagyu House locations elsewhere in the country. For now, Bellevue diners will have to wait for more details as Chubby Group works to bring its first Washington restaurant to life inside one of Lincoln Square's most storied addresses.
