Quy Hoang, the pitmaster and co-owner behind Bellaire's Michelin-recognized Blood Bros. BBQ, is recovering after suffering a stroke, with his business partner Robin Wong telling a Houston outlet the episode happened on August 16. Hoang has not yet returned home and remains in the midst of a long recovery, undergoing physical therapy as he slowly regains his mental acuity.

According to CultureMap Houston, Blood Bros. BBQ manager Marfay Magno noticed Hoang was in distress, and a Bellaire ambulance crew arrived quickly. CultureMap reports that Magno and the responding crew likely saved his life by getting him to Methodist Hospital without delay. Blood Bros. BBQ shared news of Hoang's absence in a social media post on Thursday, October 29.

Hoang's road back has included relearning the people closest to him. Per the outlet's reporting, he initially did not recognize people he should remember, though he has since remembered his family. Wong has leaned on music as part of that process, telling the outlet that certain songs can trigger his memories — he has been making Spotify playlists of his favorite tracks and even encouraged hospital staff to play Big Trouble in Little China, one of his favorite movies, for him.

Who's Minding the Pits in Bellaire

With Hoang sidelined, assistant pitmaster Jarica Brown has taken on the lion's share of his responsibilities at the smokehouse, the outlet reports. Blood Bros. BBQ has also brought on a part-time employee from Roegels Barbecue to help cover the gap. Wong said the restaurant will keep operating while trying to maintain its quality, even if there are missteps along the way, and it remains unclear whether or when Hoang may return to work.

The team's stated goal, according to CultureMap, is to maintain the legacy Hoang built — one rooted in the restaurant's earliest days as a scrappy pop-up. Hoang has tended the pits at Blood Bros. since before it had a storefront, when he, Terry Wong and Robin Wong were running monthly pop-ups as childhood friends from Alief. Those pop-ups began in 2013, according to Blood Bros. BBQ's own account, years before the trio opened their brick-and-mortar shop in a strip mall on Houston's west side in December 2018, as Texas Monthly has reported. Hoang has described himself as self-taught, telling the magazine, “I am actually self-taught.”

A Menu Built on Blended Traditions

Blood Bros. BBQ, now located at 5425 Bellaire Boulevard, built its reputation on an Asian-influenced take on classic Texas barbecue, pairing smoked brisket and other traditional cuts with flavors Hoang and his partners grew up eating. Texas Monthly has documented dishes like green curry boudin on the menu, while Hoang has described drawing on Vietnamese, Chinese, Mediterranean, Thai and even Caribbean influences. Houston Eater lists Hoang alongside Terry Wong, Robin Wong and culinary director Arash Kharat as the restaurant's operators.

The approach has also produced dishes like char siu pork banh mi, according to a separate Texas Monthly review, and the restaurant has been cited for innovations including gochujang burnt ends and togarashi beef ribs, as noted by Visit Houston Texas. The restaurant became known for selling out of barbecue most days, Texas Monthly has reported.

Years of National Recognition

That combination of craft and creativity has drawn attention well beyond Bellaire. Blood Bros. BBQ landed on the New York Times' list of 50 most exciting restaurants in America in 2021, the same year it appeared on Texas Monthly's rankings of the state's top barbecue joints, and within its first year it had already earned spots on Texas Monthly's top 25 new barbecue joints list and Bon Appétit's top 50 list. Hoang himself received a Best Chef: Texas nomination at the 2022 James Beard Awards, and the restaurant has picked up Michelin Guide Bib Gourmand recognition in 2024, 2025 and 2026.

For now, the focus inside the Bellaire smokehouse is on getting its pitmaster well. The Houston barbecue community will be sending Hoang wishes for a speedy recovery as he continues physical therapy and slowly regains his mental acuity.
