Burgerology plans to return to Patchogue in a smaller format. The Long Island burger chain has taken over the former Spycoast Kitchen & Cocktails space for its sixth Long Island location and hopes to open by November.

The new restaurant is planned for 140 seats, compared with 200 indoor seats and a large outdoor deck at the original Patchogue location, according to Newsday. Founder Eddie Galatoulas, who started Burgerology in 2017 with his wife Georgia and children Maria Milito and John Galatoulas, called the earlier Patchogue restaurant the company’s number-one location, while acknowledging that its scale did not fit the brand’s family-fun identity.

Burgerology left that space in 2024 after deciding the 200-seat venue had moved away from the format the company wanted. Company president Bill Brayer described Burgerology’s preferred model as a 30- to 80-seat neighborhood restaurant, according to the same Newsday report.

A First Patchogue Run, Then a Return

The company’s Patchogue history began in April 2020, when it took over the lease of the short-lived Sneaky Pete’s. Galatoulas initially treated the location as a pop-up, offering takeout and outdoor dining before it became a full restaurant. After the closure, he left the possibility of a return open, telling Newsday, “We'll be back.”

The former Burgerology space has since had several tenants. Spycoast Kitchen & Cocktails, an offshoot of the chain’s Port Jefferson location, took over in 2024; that Port Jefferson restaurant closed in 2025. Before Spycoast, Minnesota's began operating at the Patchogue site in 2023, following Local Burger Co., according to Newsday.

Burgerology’s Long Island Footprint

The Patchogue restaurant will be Burgerology’s sixth on Long Island, alongside locations in Rockville Centre, Huntington, Stony Brook, Massapequa and Farmingdale. The chain also has two New York City locations. In comments reported by Newsday after the 2024 closure, the company said it was considering expansion along the Interstate 95 corridor “from Boston to Florida” in the second half of 2024 and into 2025. It also told Greater Long Island it planned to expand across the East and possibly the Midwest.

Patchogue's burger scene has seen plenty of turnover beyond Burgerology's own space. Local Burger Co., which preceded Minnesota's at the site now awaiting Burgerology's return, opened its Bay Shore location in 2018 and has also run locations in Bohemia, Sayville and Southampton, as noted by Newsday. Meanwhile, Side Street Dive took over 1 Railroad Ave. in Patchogue earlier this year, according to the same Newsday report, adding one more name to the village's shifting restaurant map.

Patchogue’s Downtown in Context

A Village of Patchogue Community Development Agency document citing 2018 American Community Survey five-year estimates put the village’s population at 12,324 and reported that 3,082 residents over age 5 spoke Spanish. The agency document offers demographic context for the village, though it does not detail changes in downtown housing or development. Separately, the New York State Governor’s Office announced that Patchogue would receive $4.5 million as the Long Island winner of the fourth round of NY Forward, a public investment in the village’s downtown.

For now, the task is preparing the 140-seat restaurant for its hoped-for November opening. Whether it recaptures the energy of the location Galatoulas once called the company’s number-one remains to be seen; the new format is intended to be closer to the neighborhood-restaurant model Burgerology says it prefers.
