A new pizzeria with its own arcade is preparing to open at the Outlets at Castle Rock, bringing New York-style slices, strombolis, pasta, and soft-serve ice cream to Suite 660 at 5050 Factory Shops Boulevard. Peak Pizza is owned by Allen and Katie Hoover, who are aiming for a counter-service concept that blends quick bites with sit-down dining and video games.
The shop is described as a locally owned and operated business building a fast-casual, New York-style menu, according to WhatNow. The planned menu includes slices pulled from a rotating selection of whole pies, along with strombolis, pasta, and salads, the outlet reports. Soft-serve ice cream rounds out the dessert side of the menu.
Grab-and-Go Slices Meet Made-to-Order Pies
Per DougCo Social, customers will be able to grab a slice from eight to 10 whole pizzas kept ready at the counter, or order a whole pie made fresh. The outlet also notes that takeout will be available, with online ordering planned for the future. The build-out is sized at roughly 2,500 square feet, with seating for about 50 guests and five TVs, according to the same report.
Beer and wine are part of the plan as well, pending approval of Peak Pizza's liquor license, the site notes. Those tentative hours, as reported, would run Monday through Saturday from 10 a.m. to 8 p.m. and Sunday from 11 a.m. to 6 p.m.
An Arcade Rounds Out the Concept
An arcade is also part of the Peak Pizza concept, per WhatNow, with five to seven games supplied by Mile High Arcade expected inside the space, the DougCo Social report adds. The Hoovers have invited community members to weigh in on which games should make the cut, WhatNow reports, giving future regulars a say in the lineup before the doors even open.
Familiar Names Behind the New Pizzeria
Allen and Katie Hoover are not newcomers to the Outlets at Castle Rock. The couple already operates the mall's Auntie Anne's and Cinnabon locations, and they previously ran Villa Pizza in the Outlets' food court from 2021 until that food court closed in 2024, according to DougCo Social's reporting.
No confirmed grand-opening date has been set. The Outlets at Castle Rock continues to list Peak Pizza as a coming-soon tenant, WhatNow reports, while owner Allen Hoover told DougCo Social on October 6 that the team was aiming for a mid-to-late October opening, though no firm date had been locked in at that point.
