Chicken Salad Chick is staking out a spot near Alamo Heights, signing on to the Alamo Hills Shopping Center at 1230 Austin Hwy. for what will become its eighth San Antonio-area location. The restaurant has no estimated opening date, and fans craving a scoop of the Fruity Fran chicken salad will have to wait: the restaurant likely won't open before the second quarter of 2027.
The Alamo Heights-area deal was reported by CultureMap San Antonio, which noted the location does not yet have an estimated opening date. The Atlanta-based chain traces back to 2008, when founder Stacy Brown started it as a cottage operation in Auburn, Alabama, before Kevin Brown helped launch it into a small takeout cafe, according to the same report.
A Growing Local Footprint
San Antonio is no stranger to the chain's expansion push. Chicken Salad Chick has already opened three Alamo City locations plus units in New Braunfels and Boerne, per the outlet's reporting. That local growth traces back to 2021, when the company signed an eight-unit development deal with local franchisee OberRoc LLC to build out restaurants across the Greater San Antonio area, a commitment that, according to fastcasual.com, was expected to bring more than 250 jobs to the community. OberRoc was formed by San Antonio natives James Oberg, Jeff Rochelle, and George Shaw specifically to grow restaurant concepts in the area, the trade outlet reported.
The Alamo Hills project is part of that same pipeline. A news release distributed via PR Newswire in May said OberRoc planned to open additional restaurants in Kyle, Schertz, and San Antonio's Alamo Hills area over the next few years. That same release announced the Boerne restaurant's upcoming opening, with its grand opening set for June 3, and described it as OberRoc's fifth Chicken Salad Chick location in the greater San Antonio area.
What's On The Menu
Diners visiting existing locations can expect chicken salad varieties including lemon basil, dill pickle, bacon ranch, and the Fruity Fran, which CultureMap San Antonio describes as spiked with apples, grapes, and pineapple. The menu also rounds out with broccoli salads, pimento cheese, mac ’n’ cheese, chicken tortilla soup, loaded potato soup, and desserts, per the same report.
Part Of A Bigger Texas Push
The Alamo Heights-area signing lands amid a broader national growth spurt for the chain. Chicken Salad Chick now counts more than 330 locations across 22 states, according to a report from chainstoreage.com, which also noted the company awarded 52 new restaurants in the first quarter of 2026 alone — nearly 50% more than the 35 deals awarded during the same period in 2025. That same report put the chain's development pipeline at more than 300 locations following the new agreements, building on a 2025 in which the company awarded nearly 100 new restaurants and opened 42 locations across 14 states.
Texas has been a particular focus of that growth. The company has expanded to more than 30 Lone Star State stores since unveiling its Texas expansion plans in 2021, according to sacurrent.com, and fastcasual.com reported the chain had identified additional target development markets including Lubbock, Wichita Falls, Abilene, Midland, San Angelo, Tyler, Laredo, Corpus Christi, Beaumont, McAllen, and Longview. No opening date has been set for the Alamo Hills restaurant, and it remains unclear whether the previously stated second-quarter 2027 timeline still holds.
