Churro Station is plotting its return to the Birmingham area, with plans to open a new storefront at 4730 Chace Circle, Suite 108, in Hoover this fall. The announcement comes months after the shop’s original brick-and-mortar location at The Summit closed its doors in February.
The new spot will sit near Ashley Mac’s Kitchen and Five Guys, according to Hoover Sun, which reported the planned fall opening. The outlet notes that Churro Station previously operated at The Summit before closing there in February, though no reason for that closure has been made public.
No exact opening date for the Hoover location has been announced, the publication reports. Details on hours, pricing or whether the Hoover menu will mirror the old Summit lineup have not been released either.
From Farmers Markets to a Storefront
Churro Station’s roots trace back to owners Aaron and Jazmin Diaz, who moved from Mexico to Birmingham in 2019. The couple decided to introduce the churros they missed from home to the local market, eventually building what they describe as Alabama’s first churreria, per the same Hoover Sun report.
Before settling into a storefront, the business built a following as a mobile operation, slinging churros at Birmingham-area farmers markets, according to al.com. That popularity led to the shop’s first permanent home at 329 Summit Blvd. in January 2024, in a space that had formerly housed Steel City Pops, as reported by Birmingham Business Journal.
The Diazes have said the name Churro Station was inspired by transportation hubs, places where people from different backgrounds and cultures cross paths, a theme that echoes their own journey from Mexico to Alabama.
What's on the Menu
Churro Station’s signature offering comes filled or topped with options like Nutella, dulce de leche, cream cheese, crushed Oreos, sprinkles and marshmallows. The menu also stretches beyond churros, rounding out with lattes, milkshakes, mocha frappes, mochas, sodas and ice cream.
On Instagram, the business has described its churros as “a taste of Mexico in the heart of Alabama,” serving them from breakfast through dessert. The account has also encouraged followers to stay tuned for updates as the business has grown.
For now, Hoover customers will have to wait for a firm date before they can get their hands on the shop’s filled churros again. Until an opening is confirmed, the Chace Circle address stands as the next chapter for a business that started with a family recipe and a handful of farmers market pop-ups.
