State Cafe and Grill in downtown Easton reopened to the public on Thursday, eight months after firefighting runoff from a blaze at the nearby Hotel Hampton sent six feet of water into its basement. The breakfast and lunch spot at 14-16 S. Fifth St. had been closed since February, and its return marks the second time in four years the restaurant has clawed its way back from disaster.
The February closure stemmed from a fire at Hotel Hampton, a neighboring building, where emergency crews responded to a basement blaze on Feb. 20, 2026, according to a Pennsylvania emergency incident report, which noted the fire was upgraded to a third alarm for personnel. State Cafe's building itself suffered no fire damage, but its stock was ruined by water contamination and an hourslong power shutoff, as reported by Lehigh Daily. The runoff used to fight the hotel fire ultimately left the cafe's basement submerged under roughly six feet of water, according to WFMZ.
Rebuilding From the Basement Up
The damage forced a near-total overhaul of the restaurant's infrastructure. Everything had to be totally replaced, the hot water heaters, the alarm system, camera system, walk-in cooler and all of its contents, and the electrical system, per the same WFMZ report. Despite the extensive mechanical rebuild, the dining room itself stayed largely familiar to regulars, with repainting and other cosmetic touches the main visible change, the station noted.
Additional updates rolled out during the closure, including new cold brews on the menu along with fresh paint and bathroom renovations, according to the Morning Call. The cafe is known for its made-to-order breakfast and lunch specialties, including French toast, egg dishes, stir-fries, pancakes and sandwiches, per WFMZ.
A Second Disaster in Four Years
This is not the first time State Cafe and Grill has had to dig out from catastrophe. The restaurant closed for 10 months after a 2022 fire damaged its roof, according to Lehigh Daily, with WFMZ reporting separately that the blaze caused significant water and smoke damage and left a hole in the roof. The back-to-back disruptions have made the Easton eatery a case study in small-business resilience, with WFMZ describing the February flooding as the restaurant's second catastrophe in four years.
Before Thursday's reopening, the business tried to stay connected to its customer base however it could. In May, the cafe held a two-day breakfast and lunch pop-up with a limited menu at the Bank Street Annex, Lehigh Daily reported. The closure also cost the restaurant staff, with about four kitchen employees finding new jobs elsewhere during the eight-month gap, according to WFMZ, forcing the business to rebuild its team along with its building.
Soft Opening Gives Way to Grand Reopening
State Cafe eased back into service with a soft reopening from Oct. 22 through Oct. 25 before returning fully to its usual hours of 8 a.m. to 2 p.m. Thursday through Monday, Lehigh Daily reported. Owner Bill Sneeringer said the soft-reopening weekend drew a strong crowd. “It was a really good, busy weekend. It feels great to have all the customers coming back,” he told the outlet.
Thursday's full reopening, as reported by WFMZ.com, brought longtime regulars Kristen and Eric Caskey to the front of the breakfast line, where Kristen said she had been waiting since the restaurant reopened and called it her favorite spot despite having tried other Easton restaurants. The cafe has been in business for 12 years, and other customers echoed that sense of loyalty. Kim Niyogi said the cafe feels like family, pointing to its authentic decor, music and personal connections, while Lori Fields described the restaurant as a neighborhood gathering place and home.
Behind the counter, the mood matched the dining room. Chef Mel Rake said it had been a summer and added that he loved being back at the restaurant, while Bill Sneeringer joked about the restaurant's repeated reopenings and said he expected to feel a sigh of relief after the first day back. Co-owner Coreen Sneeringer said she looked forward to being able to say the first official day back had been completed. With the doors open and the kitchen running again, State Cafe and Grill is back serving breakfast and lunch in downtown Easton.
