Zipline Tap & Grill served its final meal in Lincoln's Fallbrook neighborhood on Saturday, Oct. 17, closing the door on the tap house at 575 Fallbrook Boulevard #109 as a new concept called Red Oak Tavern prepares to take over the space. A sign posted at the restaurant read simply, “Our last service as Zipline Tap & Grill will be Saturday, Oct. 17th.”
According to KOLN, a sign at the location also announced that “The Red Oak Tavern is coming soon,” with the new restaurant described as featuring scratch-made American comfort food alongside globally inspired flavors. The project is being led by a Nebraska restaurant group that already operates Railcar Modern American Kitchen, Timber Wood Fire Bistro, Pasta Amore and Marrow, according to the station's report.
The acquisition of the Fallbrook property was expected to be complete by the end of October, per the same account, though specifics on Red Oak Tavern's menu, opening timeline and transition schedule have not yet been released. The group has said those details will be announced at a later date.
A Chef With Deep Nebraska Roots
Leading the new concept is Jared Clarke, the restaurant group's CEO and executive chef, who brings 30 years of experience to the project, the station's report notes. Clarke is a University of Nebraska Culinology graduate and is certified through the American Culinary Federation, with a background spanning French technique, wood-fired cooking and food science.
“We're creating a menu that reflects our Midwest roots while drawing inspiration from our current restaurant menus,” Clarke said, describing an approach built around comforting, scratch-made dishes enhanced with techniques and flavors pulled from the group's existing restaurants. That philosophy echoes the trajectory of his earlier ventures: Clarke opened his first solo restaurant, Railcar Modern American Kitchen, in 2012, according to Grow Omaha, before following it with Timber Wood Fire Bistro and acquiring Pasta Amore in 2021.
His most recent project, Marrow in Gretna, opened on Sept. 2, 2025 at 17870 Oakmont Drive, just south of Tiburon Golf Club, as reported by Randy Ralston. Marrow has been positioned as “accessible fine dining,” according to Grow Omaha, blending elevated technique with approachable, casual service.
Marrow's Dining Style
Marrow has been described as “accessible fine dining,” with elevated technique and approachable, casual service.
Marrow operates under the same ownership as Timber Wood Fire Bistro, Railcar Modern American Kitchen and Pasta Amore, according to Grow Omaha's market reporting. That shared ownership group behind Red Oak Tavern has ties to Lincoln, Omaha, Fairbury, Broken Bow and Scottsbluff, per KOLN's reporting.
Owner and COO Scott Shirk said the group wants Red Oak Tavern to become a go-to spot for weeknight dinners, date nights, gatherings and special occasions, earned through consistent food and exceptional service. For now, Fallbrook diners will have to wait for further word on when the new tavern will actually open its doors.
