A four-Monday guest-chef series this fall has brought Dino Moniodis, owner of Dino's Greek Food Truck, into the kitchen at Folia Bar + Kitchen inside Appellation Healdsburg. Moniodis says every dinner in the series has sold out. The dinners give him a chance to serve a shared-table Greek menu in a resort kitchen rather than from his food truck.
Known as The Greek at Appellation Healdsburg, the series debuted in September 2026 at the resort at 101 Dovetail Lane. The four dinners bring Moniodis's Greek cooking to Folia Bar + Kitchen.
Shared-table cooking, shaped by Chios
Folia's event page describes the $85 dinner as three courses, beginning with family-style mezze — phyllo-wrapped feta with blistered cherry tomatoes, honey, sesame and sage, and kataifi-wrapped prawns — and followed by a main of wood-fired pork chop served with roasted eggplant, lentils and a charred apple-and-lemon beurre blanc. Moniodis has said Greek meals are meant to be shared around the table, a philosophy tied to summers he spent working at his family's beachfront taverna in Lithi on the Greek island of Chios, according to the North Coast Wine & Food Festival. He was born in Santa Cruz and raised in Santa Rosa. Folia Bar + Kitchen lists the menu and price.
Sommelier Tess Housholder curated a dedicated pairing list built around dry white Greek wines, according to Wine Industry Advisor; the wines are priced separately from dinner. That outlet calls the menu five-course, while Folia's event page describes it as three courses. The series was scheduled for four consecutive Mondays, from September 21 through October 12, alongside Folia's regular dinner service.
A career spanning restaurants, a truck and a short-term residency
Moniodis's career has included a food truck.
Zimi on Mission was in Santa Rosa. Reed Palmer leads the kitchen at Folia Bar + Kitchen, and Cortland Palmer serves as president of Appellation.
A Resort Built Around Food and Wine
Appellation Healdsburg opened in September 2025 as an 8.5-acre, 108-room resort co-founded by Michelin-starred chef Charlie Palmer and former Four Seasons Americas president Christopher Hunsberger, featuring two pools, a spa, 15,000 square feet of indoor-outdoor event space, and the Andy's Beeline rooftop bar, according to Hotel Dive.
Appellation's co-founder Hunsberger has described the brand's broader strategy as flipping the traditional hotel-first model on its head, with additional culinary-focused resorts planned in Sun Valley, Idaho, and Pacific Grove, California, according to Hotel Interactive.
From a Food Truck to a Resort Kitchen
At Folia, Moniodis is bringing food-truck cooking into a resort dining room. The Monday series has also given him experience beyond the stove, including fine-dining menu development, staffing, marketing and reservations handled through OpenTable.
A residency is not the same as a restaurant conversion
A separate local example is less conclusive: in 2017, the Petaluma Argus-Courier reported that the Tips Trippers planned to open a brick-and-mortar restaurant at 8445 Sonoma Hwy. The report describes a plan, not confirmation that the restaurant opened.
