
A new outdoor pop-up has taken over the waterfront perch at Four Seasons Hotel Baltimore, pairing fired-to-order sourdough pizzas with harbor views for weekend diners. Called Harbor & Hearth, the Italian-inspired concept is set up at the hotel's Splash Pool Bar & Grill and is now running through most of October.
According to Four Seasons, Harbor & Hearth is described as an outdoor Italian-inspired pop-up featuring artisan sourdough pizzas, shareable plates, handcrafted cocktails and curated wines. The hotel says the setup sits directly on the waterfront at Splash Pool Bar & Grill, bringing together what it calls aperitivo culture with sweeping views of the harbor. CBS News Baltimore reported the pop-up as now open, with its WJZ crew broadcasting live from the Four Seasons property to cover the debut.
The schedule runs Fridays, Saturdays and Sundays from October 2 through October 25, per the hotel's listing. Service hours are planned for 4 to 8 p.m. on Fridays and noon to 8 p.m. on Saturdays and Sundays, according to a release from travelprnews.com, though the outlet noted the pop-up skips October 3 because of a private event.
What's on the Menu
The concept centers on fired-to-order artisan sourdough pizzas, seasonal shareable plates and an aperitivo-inspired beverage program, the release states. Four Seasons says the dough itself is made in-house by Pastry Sous Chef Desmond Hardy and Pastry Chef de Partie Carol Glidden, giving the pizza program its own dedicated pastry-kitchen pedigree rather than farming it out to the main line.
Selected dishes also work in Chesapeake ingredients and regional influences, folded into an Italian-inspired menu developed under Executive Chef Mackenson Horebe, the same report notes. That local-meets-Italian approach is meant to tie the rooftop series back to the waterfront setting rather than treating it as a generic pizza night.
