H-E-B's only store in Fredericksburg, the Hill Country town tucked between San Antonio and Austin, is getting a remodel aimed at its grab-and-go and hot-food sections. Work on the 1,000-square-foot project at 407 South Adams Street is expected to begin February 19, 2027, and wrap up the following month.

The Fredericksburg upgrade is part of a wider expansion of H-E-B's Fresh Initiatives remodeling program, which the grocer is extending to 10 additional locations across multiple Texas markets, according to Supermarket News. The program installs front-of-house fixtures for the chain's Meal Simple hot prepared foods alongside back-of-house equipment upgrades, the outlet reports. As MySA notes, a Texas Department of Licensing and Regulation filing shows the Fredericksburg project's timeline, though the work there is described only as possibly including an expanded Meal Simple assortment, refrigerator replacements or deli improvements.

H-E-B filed plans for the Fredericksburg store's upgrades with state regulators, and the company did not respond to MySA's request for more information before that outlet's report published. H-E-B has said it will update the story as more information becomes available, per MySA.

A Statewide Push With a Wide Cost Range

Fresh Initiatives is a statewide store upgrade program designed to expand H-E-B's selection of convenient ready-to-eat hot-food options, a company spokesperson said, according to Supermarket News. The retailer's Meal Simple line already spans hot rotisserie chicken, microwave-ready meals, entrees and sides, plus cold sandwiches, salads and appetizers, the outlet reports. The spokesperson added that the scope of work varies by location, with most remodels involving equipment upgrades.

H-E-B filed plans with the Texas Department of Licensing and Regulation describing the individual projects as minor interior remodels, with costs ranging from about $166,000 to more than $750,000 each, per the same account. Across the board, 42 stores are slated for the upgrades in 2026 and early 2027 at a total cost of nearly $18 million, and 70 H-E-B locations have either received the Fresh Initiatives treatment or are scheduled to in the coming months, the report states.

From a Slow Rollout to an Aggressive Expansion

The pace of these remodels has shifted considerably since the program's debut. H-E-B launched Fresh Initiative work at a handful of stores in 2022 and pushed the rollout more aggressively in 2023, then slowed to just one store in 2024 and three in 2025 before ramping back up this year, the station's report notes. Similar projects have already touched markets including San Antonio, Austin and other Central Texas communities, according to a separate report from Yahoo News.

One comparable project was planned for H-E-B's South Walnut Avenue store in New Braunfels, where a $502,000 interior remodel will update a 540-square-foot section of the store, Yahoo News reports. Construction there was scheduled to begin August 24 and wrap by September 14, per that account. Individual Fresh Initiative remodels typically cost between roughly $300,000 and $500,000, the outlet notes — a range that puts Fredericksburg's smaller 1,000-square-foot project on the lower end of what's been seen elsewhere in the program.

Fredericksburg isn't the only small market getting attention from H-E-B lately, either. MySA, which has previously reported that a Belton store received an entirely new food service area under the same program, also notes that H-E-B recently announced a $700 million plan to strengthen its supply chain, including a planned campus on San Antonio's eastside expected to house a bakery, refrigerated warehouse and transportation building. For now, Fredericksburg residents can expect their only local H-E-B to stay open while contractors work through the smaller-scale grab-and-go overhaul in early 2027.
