Hidden Waters Farm is opening a cafe on its 100-acre property in Baltimore County at the beginning of November, giving visitors a coffee counter and farm views just over the Baltimore city-county line. Owners Tom Baum and Joe Shaffer say the new Hidden Waters Cafe, set to open at 3250 Old Court Road, will expand the farm's existing operations beyond its fields and wholesale market.

As WBAL-TV reports, Baum said, “We just think this is the canvas to do a lot of great things.”

The Farm's Owners

Baum and Shaffer own the farm, which uses rotational grazing.

The farm added a wholesale market in 2025, before this fall's cafe announcement pushed the property further into direct-to-consumer territory.

A Baltimore City Connection

Aaron Pitsenberger serves as Board President for Whitelock Community Farm, an urban farm in Baltimore's Reservoir Hill neighborhood.

Hidden Waters Farm sits inside the Baltimore Beltway at 3250 Old Court Road.

Local Supply Chains and Farm Regulations

Prigel Family Creamery operates out of Bellevale Farm in Glen Arm, Maryland. The Prigel family has farmed in Baltimore County for over five generations, according to Sunshine Whispers.

Maryland regulations also shape what farms can sell on-site. State agricultural rules include registration requirements for raw milk sold as animal food, according to Maryland raw milk law guidance.

A Farm Event

The farm hosted a 2024 HarvestFest featuring hayrides and live music. The planned cafe will add a new offering to the farm.
