A Mongolian grill and sushi chain out of Connecticut is eyeing Latham Center for its first New York restaurant, with plans to fill a building that's sat empty since Carrabba's Italian Grill closed its doors there. Hungry Bowl Mongolian Grill & Sushi Ramen is targeting the space at 675 Troy Schenectady Road, right next door to The Mighty Crab, and the restaurant group says its goal is to open by March 2027.

The move was detailed by NEWS10 ABC, which reported that Hungry Bowl is adding its first New York location to Latham Center. The Connecticut-based chain already runs locations in Newington, Connecticut; Bowie, Maryland; Leominster, Massachusetts; and Northborough, Massachusetts, giving it a foothold across the Northeast before it ever sets foot in the Capital Region.

The building the chain hopes to take over has been vacant for a while. According to WGNA, it has been a few years since the old Carrabba's Italian Restaurant closed at the Latham Center plaza, leaving that spot empty before Hungry Bowl emerged as its planned tenant.

What's On The Menu

Hungry Bowl's pitch centers on variety and interactivity. The chain's offerings run from meats and seafood to seasonal vegetables, sushi, sashimi, specialty rolls and Japanese ramen, per the same NEWS10 report. At its existing Newington, Connecticut restaurant, Hungry Bowl runs a Mongolian Grill and Sushi Ramen all-you-can-eat format, according to the company's own site.

That AYCE setup lets diners build their own bowls before handing them off to the grill station. Hungry Bowl explains on its website that customers can choose their favorite fresh ingredients and watch as they are cooked into dishes on the Mongolian grill. The chain's menu page adds that the broader concept features an all-you-can-eat dining experience spanning Mongolian grill, sushi, ramen and sashimi.

A Developer Banking On The Spot

Latham Center is owned by COR Development Company, LLC, which told NEWS10 that the new restaurant will emphasize high-quality ingredients, authentic Japanese flavors and a warm, comfortable dining atmosphere. The developer framed the addition as a boost for the shopping complex's overall tenant mix and a fresh dining option for the surrounding community.

The plaza itself has been filling in gradually for two decades. Latham Center has steadily added tenants since it opened in the fall of 2004, according to COR Development's property listing, which describes the site as a 46-acre property with 300,000 square feet of space and 1,700 feet of frontage along I-87.

No construction timeline, permits or lease terms have been made public, and March 2027 remains the stated target rather than a confirmed date. Still, for a Capital Region dining scene that's watched the old Carrabba's building sit dark for years, a confirmed tenant with an opening goal on the calendar is itself the headline.
