June Coffee is doubling down on its growth plans with a second location headed for Hoover's Knox Square development, a shop the company says will be twice the size of its original Birmingham cafe and will come with a bigger food menu.

The expansion was reported by bizjournals.com, which notes that the new shop will offer an expanded food menu alongside the larger footprint. June Coffee got its start as a small-batch coffee roaster in 2018 before opening its first café and storefront in 2022, according to the company's own about page. The roaster was founded by Jimmy Truong, who remains at the helm of the growing brand.

What's Coming to Knox Square

Knox Square itself has been one of the busier development stories in Hoover over the past year. The Village at Knox Square is a mixed-use project spanning 7 acres of commercial land alongside 160 new homes, according to developer Terra Equities. Phase 1 of the project totals 48,000 square feet, while Phase 2 is set to add another 22,000 square feet on 3.5 acres next to the first phase, with pad-site and build-to-suit options still on the table per the same listing.

The development sits in western Hoover across from the Hoover Met, part of what WBRC describes as a 50,000-square-foot project designed to create a neighborhood shopping area. Terra Equities lists Tazikis Café, Ashley Mac's, Body Bar Pilates, ISI Elite Training, Salon 43:1, The Joint and Cookieplug among the development's anchor tenants.

A Growing Roster of Neighbors

June Coffee won't be the first Birmingham-area food brand to plant a second flag at Knox Square. Ashley Mac's, a Birmingham-based café and kitchen founded in 2005 by Ashley McMakin, expanded to the development with its fifth Birmingham-area location, as Bham Now reported at the time. That café landed at 5840 Elsie Road, across from the Hoover Met and Finley Center, placing it in the same fast-growing corridor June Coffee is now entering.

Bham Now has described Knox Square as one of Hoover's fastest-growing developments, with a steady stream of new businesses joining the mix. A separate report from al.com indicated the development was fully leased as of late September 2025, though it's not clear from available information whether that status applies to the same phase or space planned for June Coffee's new shop.

Details on an exact address, construction timeline, or opening date for the Knox Square café have not been independently confirmed. For now, June Coffee drinkers will have to keep heading to the original shop while the Hoover build-out takes shape alongside the rest of Knox Square's growing tenant lineup.
