Egg Lush Cafe, the Colorado Springs breakfast spot known for its soft-scrambled egg sandwiches and hearty burritos, is setting its sights on Denver with plans for a new location at 1360 N. Grant St. The cafe currently serves egg sandwiches, burritos, and specialty beverages out of its downtown Colorado Springs storefront, and it is planning a Denver location.
According to WhatNow, Egg Lush Cafe plans to open the Denver location at 1360 N. Grant St. Separately, Commercial Search lists a 2,870-square-foot ground-floor retail space at 1350 N. Grant St., inside The Residences at Capitol Heights, a seven-story mixed-use residential building constructed in 2000.
The storefront previously housed a location of South Korean fried chicken chain bb.q Chicken, which left behind built-in restaurant infrastructure including a grease trap and exhaust hood, per TenantBase. That existing kitchen setup could help trim build-out costs for Egg Lush as it prepares for its Denver location. Commercial listings for the space show a triple-net lease rate between $33.00 and $35.00 per square foot annually, representing an estimated monthly base rent of $8,371 plus building expenses, the same listing notes.
A Korean Street-Food Concept Rooted in Colorado Springs
Egg Lush Cafe was founded by Seoul native Rachael Nam, who launched soft operations in August 2025 before holding an official grand opening the following month at 1025 S. Sierra Madre St. in downtown Colorado Springs, according to the station's report from SoCo Insider. The menu draws on South Korea's viral egg sandwich trend, popularized by chains like Egg Drop, featuring thick, soft-scrambled eggs tucked inside slow-fermented brioche bread, per the same account.
Egg Lush describes its Colorado Springs location as a neighborhood gathering spot for families, couples and friends, and that original cafe includes both indoor seating and an outdoor area, WhatNow reports. Egg Lush also has a listing on Uber Eats.
Scaling the Brioche Supply Chain
Founder Rachael Nam said in November 2025 that she was seeking a loaf she preferred and might eventually sell brioche at the cafe, according to The Gazette.
The Grant Street site sits in Denver's Capitol Hill/Uptown neighborhood, placing the cafe in a high-density, pedestrian-heavy district, per Commercial Search. As for the Denver location itself, no layout has been announced, and it remains unclear whether it will follow the indoor-outdoor format of the Colorado Springs original.
More Turnover in Capitol Hill's Breakfast Scene
The potential arrival of Egg Lush adds to a season of change in Capitol Hill's morning dining lineup. Hoodline recently reported on Santos Café's move into the former Syrup space at 410 E. 7th Ave., set to open this November after Syrup's departure. Together, the two moves point to a breakfast and brunch market in flux as new concepts compete for Capitol Hill's foot traffic.
Beyond the Grant Street address and lease terms, further details about the proposed Denver location, including an opening timeline and seating capacity, have not been announced.
